Vodka Smoothie

Reviewed: Mar. 13, 2011
These were pretty good. I only had fresh strawberries so I sliced them and put them in the freezer, I also only had 12 oz of orange juice but kept everything else the same, it was fine but would probably be better with the full amount of orange juice. I think maybe a bit more ice would be nice.

Cinnamon Mocha Cupcakes

Reviewed: Mar. 13, 2011
I got nine cupcakes from mine, but I probably could have filled my cups just a little bit more. Taste was really good. I did not make the icing with the recipe I made a Kahula butter cream thengrated a bit of chocolate on top.

Angel Food Candy

Reviewed: Mar. 13, 2011
I was told about this candy from my husband's family that lives in Wisconsin. I had never heard of it before. I really like it and it seems to be a hit with family and friends. I did not completely cover in chocolate, just dipped a little bit. I don't know how to get it to break or cut nicely without crumbling though.

Salmon with Brown Sugar Glaze

Reviewed: Mar. 10, 2011
Very simple and easy, I only made two servings and gave the recipe four stars because if I woud have left my fish under the broiler for 10-15 minutes I would have had a charred mess. Mine only took 6 minutes. Great flavor with simple ingredients, but watch your fish individually under the broiler carefully.

Chocolate Chip Coffee Cookies

Reviewed: Mar. 8, 2011
Absolutely love these, made almost exactly as written except I only had 2 1/2 cups of milk chocolate chips on hand so I tossed in about a 1/2 cup of left over vanilla chips I also had on hand...tasted wonderful and cleaned out my pantry. I used Starbucks Creamed Coffee Liquor and it was absolutely heavenly...and I think the creamed coffee went very well wiht the vanilla chips I put in. Thanks for an awesome recipe, I'll be using this often.

Creamy Swiss Chicken Casserole

Reviewed: Mar. 5, 2011
This waws good, I made the sauce exact, but only used two chicken breasts and they were not done in 30 minutes, I had to cook for about 10 minutes longer. Flavore was good but a bit salty. Not sure if they make low sodium cream of chicken soup, but I'd try that next time and maybe fresh mushrooms because between the soup, canned mushrooms and cheese that's a lot of salt.

Easy Chicken Marsala

Reviewed: Feb. 27, 2011
Really like this, I made the entire sauce recipes but only used two chicken breasts. I wanted the extra sauce because I served it over pasta. The only reason I gave it four stars was because I would have liked the sauce a little thicker as others had mentioned. I will add a touch of cornstarch next time I make this...and I will be making it again soon, hubby said it was a "do again"

Spinach Shrimp Fettuccine

Reviewed: Feb. 20, 2011
This was good, I only made a half batch and I used sun dried tomatoes since I had some on hand and I don't like plum tomatoes. I also used frozen pre-cooked shrimp because that's what I had on hand so I just warmed them up in the skillet. I thought it was a bit much pasta for the amount of shrimp and spinach, but the flavor was good.

Three Cheese Noodle Bake

Reviewed: Feb. 13, 2011
Really liked this, made it to pack in my lunch for the week or to grab a quick somethin' somethin' in the evenings. I did substitute ricotta cheese for the cottage cheese but everything else was ledt the same. I never use cottage cheese in a dish like this, guess that's just how I was raised.

Baked Teriyaki Chicken

Reviewed: Feb. 13, 2011
This was absolutely delicious!!! I did substitute fresh grated ginger for the dried and I cut the amount of thighs in half still using the full recipe for the sauce and I placed it over Jasmine rice to complete the dish. This is going to become a staple in my house!! Thanks for a great recipe!!

Biscuit Baking Mix

Reviewed: Feb. 12, 2011
Seems to be a good substitute for Bisquick. I was making a recipe for chicken and dumplings that called for Bisquick and I didn't have any on hand, hopefully it works as well for biscuits.

Tomato Orzo Soup

Reviewed: Feb. 12, 2011
I don't know if it's really fair rating this soup because I didn't make it exactly like the recipe. I omitted the celery...don't like the stuff and I substituted ditalininoodles for the orzo added a few tablespoons of tomato paste just because I had some left over in the fridge and I added about a cup and a half of chopped fresh spinach instead of parsley cuz I love spinach, I loved it!!

Szechwan Shrimp

Reviewed: Feb. 5, 2011
Not bad, but definitly missing something. I tasted the spice from the red peppers, but it still needs something to give it a little oomph. I made about 50% more sauce and put it over steamed rice. It's a good start and I'll no doubt play with it again, maybe more honey, I think it should be more sweet...possibly more soy sauce...I used low sodium and I think it could have benefitted from a touch more salt.

Classic Banana Bread

Reviewed: Jan. 29, 2011
This was really good, I followed the directions exact except substituting pecans for the walnuts because that's what I had on hand. I did have to bake it about 15-20 minutes longer though...my pan may have been a little smaller causing this.

Oven Roasted Red Potatoes

Reviewed: Jan. 23, 2011
These were really good. I've made a similar dish with sweet potatoes. Onion soup mix is so versatile...does any one really make soup from it? I don't. Heated up the marinated chicken I made last night and this made a great football-Sunday dinner.

Banana Prune Muffins

Reviewed: Jan. 23, 2011
Loved these!! I have a bunch of prunes in my pantry and a few bananas on my counter getting overly ripe so this made a great combination. I can't wait to take them into work tomorrow. They were super-delish right out of the oven!!

Delectable Marinated Chicken

Reviewed: Jan. 22, 2011
Yum!! This was great!! I made the marinade exactly as written except I cut everything in half since it was only me eating and I probably marinated it for 6 hours. It's a lot of ingredients, but everything works together so nicely.

Thighs on Rice

Reviewed: Jan. 22, 2011
I used boneless, skinless chicken thighs and thought this was good. I used jasmine rice because it is my favorite and I always have it on hand but had to bake it at least an hour and 15 minutes until the rice was tender. The quoted time is absolutely not enough time for rice to cook. My thighs were a bit thick so they needed the extra time as well. Next time I will add some other veggies such as carrots as others have suggested.

Cola Pork Chops

Reviewed: Jan. 22, 2011
The flavor was good, but I give it three stars because 1 hour is too long to cook most pork chops and they gave off a lot of liquid and made the good tasting sauce too thin and runny. I might try searing the porkchops first and browning them before baking them with the sauce next time.

Elegant Orzo with Wilted Spinach and Pine Nuts

Reviewed: Jan. 17, 2011
Really likes this!! I don't like tomatoes so I omittef that but made everything else as written. I didn't use an additional frying pan, just used the same pot I cooked the orzo in to heat the EVOO, spices and wilt the spinach then added the orzo back in...makes less clean up.
