Jill's World-Famous Coffee Liqueur Brownies

These were really good, good flavor and good texture. I followed the recipe exact using Starbucks cream coffee liquor. I'll keep this recipe as a go-to for a great chocolately crowd pleaser.

Asian Grilled Pork Tenderloin with Pineapple

I left the recipe and ingredients on the counter yesterday when I left for work and hubby had everything ready to throw on the grill when I got home from a stressful day. He prepared the marinade exactly as written and refrigerated everything for about nine hours. He sliced the pineapple instead of cutting in chunks and just grilled the slices. Everything was absolutely wonderful and hubby said he'd do it all again.

Buttermilk Pancakes II

These were good, my hubby made them for company this morning. He did need to add a bit more flour because the batter was thin. Not sure why these came out thin for my hubby, I made again today, cutting it down to only 4 servings, but making exactly as written and they were great. Even have some to freeze for breakfast later.

Made these today hoping to use up the last of some candied cherries I had left over. I made a batch and a half which called for 1 1/2 eggs...well, since I didn't want to use only half an egg I used two, but I probably should have only used one, my batter was a bit thin and spread out way too much when baking. The cookies tase good so I may need to try again next time I need to use candied cherries for something.

Pesto Sauce

This is a wonderful pesto sauce, I used basil from my herb garden and tossed a few spinach leaves in as well. Loved the sunflower seeds in the pesto for a nice crunch, especially since pine nuts are so expensive. I loved the sunflower seeds. I also added an extra clove of garlic...you can never have too much garlic :-)

Sweet Potato Pineapple Casserole

Made this for Easter. I only used two sweet potatoes, but they were huge, probably more than three regular sweet potatoes. I also used the entire can, 8 oz. (1 cup) of crushed pineapple and thought it was good. Nice sweetness but not overly sweet.

Cardamom Banana Bread

This was good, unfortunately I didn't have dark rum so I used light rum. The banana rum-raisin bread was good, but it didn't seem to have a whole lot of cardamom taste but I could smell it. Smells wonderful, I might add just a bit more cardamom next time or maybe omit the rum and raisins. I think I would call this recipe rum-raisin banana bread.

Shrimp Francesca

This was good. I used the frozen shrimp you can buy in the bag a the grocery store, it only contained 14 ounces and I did not have fresh parsley so I used dried and substituted parmesan cheese for the romano. It was easy and tasted great but it took a bit more than 12 minutes to cook.

Green Bean Stir-Fry

This was awesome!! I can't stop eating them!! I doubled the sauce and used about 1 1/4 pounds of green beans. I loved the sauce, i was a little bit skeptical at first, but I'm glad I tried it. I'll be making these a lot!

Sesame Parmesan Zucchini

This was really good. I actually doubled everything except I used one zucchini and one yellow squash!! Delish!! Wouldn't change a thing about the recipe. I'll be making this often.

Penne in Vodka Cream

Thougt this was pretty good. I cut back the butter to 6T, the cream to 3/4 cup and the pepper flaked to 1/4t. I think I could have use the whole 1/2t of pepper flakes and will next time, but next time I would add about 1/2 of a chopped onion with the butter and a few cloves of garlic and fresh mushrooms. I'll be making this again.

Chocolate Frosting I

Really good frosting. I was a bit hesistant at first because I never made a buttercream type frosting with melted butter...and yes, I used butter not margarine. I took the advise of other reviewers and added a couple extra tablespoons of the coco and cut back to about 2 1/2 cups of confectioner's sugar. Used this on the Cream Filled Cupcakes from this site.

Cream Filled Cupcakes

I only made a half batch which should have yielded 18, but I only got 12 cupcakes and I didn't over fill them, a couple domed a little, but I like my cupcakes that way. The batter was very liquidy, so I was a bit nervous, but they baked up very nice. The filling was the perfect amount for the 12 cupcakes I got out of a half batch. I did not fill them from the bottom, I filled from the top with my decorator tip used for filling cupcakes. Turned out great. I also used the Chocolate Frosting I recipe from this site to top them off. I think I'll be making these for my cousin's rehearsal dinner.

Tuna Noodle Casserole from Scratch

This was good and I made it exact except I did not use the extra melted butter and bread crumbs...I'm just not a fan of bread crumbs in my casserols. I underseasoned a bit with the salt and pepper...I'm used to making this with a soup mix which adds plenty of salt, so make sure you taste it.

Chicken Marsala

This was pretty good. I only used two chicken breasts because they were quite large and they did use up all the flour mixtue. I also used vegetable broth instead of chicken because I had some open in the fridge. Put over spaghetti. Quick, easy and good...I'll be making this often.

Honey Ginger Shrimp

I agree with others, the 1 Tablespoon of red pepper flakes has to be a mistake...why would you have honey ginger shrimp where the honey is only 1 teaspoon and a ton of red pepper flakes? I used about 1/2 teaspoon red pepper flakes and about 1 1/2 tablespoon of honey. The flavor was good, but I think I may try some of the other reviewers suggestions and use some coconut milk.

Apple Banana Cupcakes

Yum!! These are really good. More like muffins than cupcakes though. I also substituted half whole wheat flour, next time I'm going to try to cut some of the shortening out and use applesauce...I mean they already have apple in them :-) why not.

Oven Fried Chicken II

Really liked this!! Made for dinner, we didn't find it greasy and the thighs stayed very moist. I'll be making this again. I mixed the paprika with the breadcrumbs and added just a little extra because I didn't want it just sprinkled on top.
