Mom's Brussels Sprouts

This was really good, I'm not a huge brussel sprout fan, but these I like. Followed recipe exact, no need to change. Thanks for a great recipe.

Popovers

Made these Christmas Eve morning for breakfast and they were wonderful. I don't have a popover pan, but I used a normal muffin pan and it worked out just fine. I followed the recipe exact and thought it was great. Now I may try it again making it more on the sweet side with my Pampered Chef caramel sprinkle then I like to make them savory by adding a bit of Old Bay Garlic and Herb seasoning. Thanks for a great recipe!

Peanut Butter Cup Cookies

These were great!! I thought I'd try these instead of my old recipe I had that uses shortening instead of butter. I actually got 48 cookies out of this recipe, and I followed the recipe exact. I used my Pampered Chef small scoop to put the dough in the little muffin cups and my Pampered Chef wooden dowel to "stamp" stamp the middle...I just caution, I stamped some too thin and the rim of the cookie pulled off when I tried to pop the cookie out of the cup. The flavor of these is great...and just a side note...it looks like Reese's is making the minature peanut butter cups even smaller!!

Stuffed Cabbage

I made stuffed cabbage for the first time today using this recipe trying to imitate my grandma's stuffed cabbage. This was a good start, a little bland and I ended up adding a few more spices to the tomato juice. I then called grandma and she told me she uses tomato sauce instead tomato juice to add a little thickness and some extra flavor. Everything else is pretty much the same. Thanks!

Delicious Pineapple Muffins

I thought these were great. I used fresh pineapple putting it through the food processer to "crush" it. I thought the 1/4 cup of butter was a bit much for the crumble mixture...mine came out more like a paste than a crumble, about half that would have been plenty.

Honey Banana Muffins

I thought these were wonderful. I made three different kinds of muffins this morning in my new double oven and these were my favorite. I probably should have mashed the banana a little bit more, but it is a nice surprise biting in to a little chunk of banana. Other than that I followed the recipe exact, using resh grated nutmeg.

Blueberry Cornmeal Muffins

A nice blend for a great tasting muffin. Unfortunately I didn't read the reviews before I made them and I also added too many blueberries, my bad, and I won't do that again...it made some of the smaller muffins (I made veru large ones and smaller ones) a bit mushy...but again that was my fault. I did use fresh blueberries not frozen also. I will try these again measuring my blueberries exact.

Awesomely Easy Sesame Asparagus

I think this is going to be my "go-to" asparagus recipe from now on. I didn't have black sesame seeds, so I just used regular but it was wonderful. I did cut the asparagus into about and inch and a half to two inches before cooking just to make it a bit easier to deal with.

Orange-Glazed Asparagus

I thought this was good. As another reviewer questioned...how much is a bunch? I know at the supermarket the asparagus is normally sold in bunches, but I don't know if they are "bunched" in any uniform way. Anyway, I did cut the recipe down to only two servings but did add a little extra orange juice and zest. The orange adds a nice tangy zip to it. The sauce never thickened up so I just poured it over and enjoyed.

Christmas Morning Popovers

Made a half batch of these today. A good base, I don't like to use a lot of butter or jam as the intro to this recipe suggests so I think next time I may try to add some chives, herbs and seasonings to them. I often put garlic Old Bay seasoning in popovers, but I usually try the recipe as written the first time and these are a very good popover base.

Lasagna Roll Ups

These were pretty good. A little messy to make but easy to portion out. I only made a half batch with less than half a box of lasagna noodles. I really just wanted to finish out my noodles. I used cubed tofu that I had, but I would probably next time put that through the food precessor with the ricotta to for a better texture, the cubes didn't break up well stirring. I used my own pasta sauce the entire 10 oz of spinach even though I onlt made a half batch. I'd make these again probably adding a clove or two of minced garlic.

Oat Applesauce Muffins

I give these 5-stars for what they are...low fat, low-calorie good tasting muffins. When you make a low fat muffin you can always expect a "rubbery" outside, but there's not much you can do about that shy of adding extra butter and/or oil...but then it's not low fat. Besides that, the inside is moist and the muffin has great flavow. I used low fat buttermilk and because I had another recipe I was making today that called for two egg yolks I used two egg whites in this instead of 1 whole egg just so I didn't waste any egg and it came out just fine. I may add some cinnamon and raisins next time for even more flavor. I will be making theses again.

Ham and Pear Panini

Noy bad, I skipped the pepper since I really don't like pepper. I'm also not a big fan of pears, but it really works in this. I did use shredded mozarella since that is what I had, but I think next time I may try sliced apple and sliced swiss.

Rhubarb Strawberry Crunch

First, I admit, I cannot take the credit for baking this one, but I found the recipe for my hubby's niece, Tammy while we were on vacation in Wisconsin. She baked it exactly as written and it came out wonderfully. She needed a little bit longer bake time, but that could have been her oven. I'll be making this the next time I can find some rhubarb in Florida.

Ranch Burgers

My hubby really liked these which is why I gave them 5 stars. I'm not much of a burger fan myself, but thought they were pretty flavorful. I did cut the recipe in half and only made 4 burgers but I did add the full packet of dressing mix.

Lighter Banana Muffins

I don't know how fair it is for me to rate this recipe because I did change quite a bit, so I just want to make that disclaimer. I used 1 cup whole wheat flour and 1 cup all purpose, cut back to 1/2 teaspoon of salt and added an additional 1/4 cup unsweetened applesauce, 1/2 teaspoon of cinnamon just because I like cinnamon and 1 teaspoon of vanilla for the same reason. The flavor is wonderful, the calorie count is the best thing about them and I do agree with other reviewers that they stick to the muffin papers, so I used some papers and some of the aluminum liners, they come out perfect with the aluminum liners so use those or just spray your muffin tin with no papers. With the added applesauce I did not think the muffins were dry at all.

Cold Macaroni and Tuna Salad

Hubby and I loved this. I made it tonight along with a bunch of other stuff I was prepping for our weekend camping trip...it was so good we decided to have a little tonight for dinner and had to stop eating so we'd have some left for the weekend. I prepared pretty much as written with the exception of using 6 oz of frozen peas instead of 5 oz one 6 oz and one 7 oz can of tuna instead of two 6 oz just because that was what I had on hand and I added a little more mayo for some extra moistness with the extra tuna and peas, maybe an extra tablespoon or two. I could see substituting grilled salmon for the tuna, possibly adding some cheese, but honestly it doesn't need anything more. I just recommend you taste it first before you start adding extras, but I can understand adding extras to suit your taste.

Sour Cream Biscuits

Just like the other reviews I needed to add more water. I cut the recipe in half to just make 6 biscuits and I still needed to add 3 tablespoons of water. The flavor and texture were nice and I did add in about a table spoon of dried chives since wheh I think sour cream I always think chives too. Might even be nice to add a little shredded cheddar. I just made drop biscuits, not rolled out and cut. I will use this again, but will make a couple modifications.

Easy Pesto

Loved this recipe, I will admit I did not measure everything exactly, but just by eye-balling it I know I was very close. You don't need to change a thing, but I think I may try adding some grated parmesan next time and may switch up the nuts just for variety. I will be making this often as a change from red sauce...and not to mention I now have a basil plant.

Strawberry and Feta Salad

This is a great salad except it seems to be way too much vegetable oil in the dressing, I ended up dumping some of it out. I'd cut the oil in half next time.
