Chocolate Peanut Butter Cookies

Hubby liked these. I followed everything in the recipe exact except I didn't have peanut butter chips but hubby wanted the butterscotch ones we had on hand. Seemed like a good combination.

Creamy Hot Cocoa

Good but way too sweet, could have cut the sugar by a 1/3. I added about a teaspoon of espresso powder for a little kick.

Barley, Lentil and Mushroom Soup

This was pretty good, bit more stewy than soup, it was a bit thick, but very flavorful and good. Needs an extra couple cups of broth.

Small Batch Popovers

Very simple and very good. I have a popover pan I used instead of the custard cups and it made three popovers. I also added about a 1/4 cup of shredded white cheddar...yum!

Peanut Butter and Maple Oatmeal

Our first new recipe of the year, New Years Day breakfast, hubby and I both liked it. Made exactly as written except we used JIF peanut butter because we didn't have natural peanut butter...still very good but probably don't need the added brown sugar if you use regular PB.

Mushroom Lentil Barley Stew

Threw some of this in the slow cooker over night and couldn't resist but to have some for breakfast, really good. It seems like my lentils pretty much broke down but it added to the thickness and texture of the stew. Instead of using vegetable broth I used chicken stock that I had on hand.

Onion Soup Pork Chops

Pretty good, we doubled everything and used a mixture of wild rice and jasmine rice, it took a little longer to cook the rice, but it was good.

Zesty Slow Cooker Chicken Barbecue

This was pretty good. I made exactly as written using only 5 chicken breasts because they were very large. I had leftover bbq sauce and dressing I wanted to use up which was made this recipe perfect to try. As others have said the sauce was a little thin and did thicken up after I shredded it. We made open faced sandwiches and look forward to putting it over baked potatoes tomorrow.

Nutty Apple Crisp

Really good, I cut it back to about 2 servings but didn't measure everything exact and added a bit of cinnamon for our own tastes bakes them in individual ramekins. Will be making this a lot this fall and winter.

Turned out great. Followed recipe exactly but had to use an 8x8 pan because that's what I had handy. I also mixed a few of the chocolate chips in the batter. Wonderful1!

Spinach and Mushroom Frittata

This was good, made exactly as written, maybe a little bland, possibly I didn't season enough, but I will certainly try again, it was a great start, might add some zucchini or shredded carrots next time.
