Yellow Squash Casserole
This was excellent and very easy. I added some minced garlic to the mix, but that was the only change I made. I will definitely make this again and next time I might try it with zucchini.

Rich and Creamy Tomato Basil Soup
This soup was delicious! I made some minor revisions. I used one can diced tomatoes and 2 fresh roma tomatoes (didn't seed or peel). I added 1/2 tsp. of salt and 2 T. sugar to cut the acidity. I cut the butter to 6 T. and cut the cream to about 3/4 cup. I also added a dash of crushed red pepper for some kick. Yummy!
