About this Cook
classically trained and ACF certified chef, I have worked in restaurants in San Francisco, Chicago, Miami, plus a hunting lodge in Alaska
My favorite things to cook
anything and everything, but I love to cook with latin and SE Asian flavors, Tex Mex and sauces from classic to "how in the world did you make that"
My favorite family cooking traditions
Teaching the basics to my family, start with simple and get bold. Always when adding flavors you never have worked with, add SMALL amounts as you can add more but can't take any out, TASTE TASTE TASTE, I have lived off my tasting spoon while in the kitchen.
My cooking triumphs
having empty plates returned to the kitchen
My cooking tragedies
Chocolate Lava cakes, I usually make extra as each oven has different hot spots that cook some too long, the matter of 10-30 seconds cooking can ruin one.

Foolproof Rib Roast
much easier to cook @ 450 for 20-30min, then drop to 325 for final 1.5-2 hrs for 8# roast or just sear meat, then roast @ 200 for a few hrs
