Carne Con Chilies

This was delicious! I took advice from some of the commenters and used the slow cooker on this one -- 1.5 hours on high and another 5-6 on low. I made a few substitutions with what I had on hand. I only had about 4 tomatillos so I substituted the rest with tomatoes and a roasted anaheim chili. I'm not a fan of seasoning salt, so I just left it out on this one. It was still great! The meat just fell apart in the slow cooker. I would definitely try this one again.

Sophie's Zucchini Bread

I had never tried zucchini bread before, but because the boy refused to eat zucchini any other way I went with it. I must say, this turned out great! I added chocolate chips as per other suggestions and omitted the nuts and it turned out nicely. Thanks!

Pasta Primavera with Italian Turkey Sausage

The boy and I loved this. It reheats really well too! I didn't have the zucchini on hand, but I did add some roasted anaheim chilis and red peppers, which worked really well with this. I also added a can of diced tomatoes because only had 3 tomatoes on hand.
