Banana Crumb Muffins

AGH! SO good!! I had NO idea banana muffins could be this YUMMY!! I opted to try a HEALTHY version of these and still keep them delicious. I think I succeeded on both! I pulsed oatmeal in the coffee grinder and used that for 1/2 of the required flour, with the remainder, I used wheat flour. I used four bananas instead of three, and two eggs in order to reduce the butter and keep the moisture. DO NOT replace butter with OIL - UGH! Delicious with butter, but I used a 1/4 c instead of 1/3 c. I used the awesome sugar substitute IDEAL, which comes in regular and brown sugar. I used 1/4 brown and 1/2 white. As others suggested, I added 1t of vanilla and also cinnamon and nutmeg to the batter. Makes a HUGE difference in flavor! The only this I changed to the crumb topping was adding some oat flour and a bit more flax meal. If you've never tried flax meal - please do! Healthy, nutty goodness! Southern Fried Cabbage

YUUUUM!!! I loved this!! I made cabbage rolls for dinner and didn't want to waste the 3/4 head of cabbage so tried this recipe. Glad I did! I didn't use the bacon but regularly keep bacon grease in the freezer for frying with flavor...perfect time to get it out. I used 2 T of bacon grease and NO vegetable oil. If you cook long enough, it really doesn't need any more oil. I found mine needed more salt for my taste. Then after a good 30 minutes on the stove, I splashed some vinegar in the pan, stirred it around and served. I planned on having it for a second meal but husband loved it so much he polished it off the next day!

Awesome Sausage, Apple and Cranberry Stuffing

This is my GO TO recipe every Thanksgiving now! My guests were raving about the many flavors this offers. I was leery of the sausage overpowering the recipe but it doesn't at all. MELDS in well. I had my heart set on a CORNBREAD dressing so that's the only change I made. I used cornbread in place of the WHITE bread and left the whole wheat as recipe calls for. Unbelievably delicious!! GREAT recipe!!!

Mexican Casserole

THIS IS SOOOOO GOOD!!! I took some suggestions mentioned and sliced an onion, broiled it until caramelized and somewhat charred. I grilled chicken with minced 3 cloves of garlic and sprinkling of taco seasoning. I then cooled and diced it up, along with dicing up onion and set aside. I then fried some already cooked brown rice (Schwann's!)with sprinkling more taco seasoning, olive oil, a little juice from jalepenos and water until rice started to brown. Then added 1 cup of salsa and 1/4 cup of lite sour cream along with chicken and onions. Added can of Black Beans w/Jalepeno along with Mexi-Corn. Mixed all together, put in casserole dish. Covered with 2 cup package of shredded cheddar and 1/2 cup crunched corn chips. HEALTHY dish and easy too!! Will make this MANY times again and will no doubt taste better the next day. THANKS Sue for a great recipe!!

Eggplant Parmesan II

I did was some suggested and sweated the eggplant slices in salt. PLEASE be sure to rinse thoroughly afterwards! They come out almost dehydrated so they did not need to be sliced as thinly as I had. Next time I will either not sweat them or just slice a little thicker. Awesome flavor though and I will definitely try again!

Bill's Blue Cheese Dressing

This recipe is awesome! Leave as is for a delicious and thick blue cheese dip. For dressing, to make it pourable, I cut the mayo down to 1/2 cup and thin with buttermilk until desired consistency. For those who rated this a ONE star and say that worchestershire saw has NO business in a blue cheese dressing recipe should check out several recipes from master chefs. It's used frequently and most definitely adds alot of depth to this recipe. HINT! If you don't have buttermilk (MUCH more yummy than regular milk), add 1 T of white or apple cider vinegar to a cup of milk. Stir lightly and watch it thicken! I make this dressing hours ahead of time so the flavors can really meld together. Yummy!

Peanut Butter Noodles

This is yummy!! I make this when my husband isn't watching, because he wouldn't appreciate the dish is he saw peanut butter going into it. OMG! It's delish! I serve with salmon fillets that are individually wrapped, and drissle some of this sauce over the top before baking. There's lots of sauce and I prefer the noodles not soupy. Then I place the fillet right on top of the noodles. QUICK, nutritious and YUMMY dinner! Great job posting this one!

Charline's Sweet Potato Casserole

This is a yummy one! I made for a Thanksgiving dinner and people were having second helpings of this instead of pumpkin pie for dessert! It's quite sweet but the topping is amazing. I omitted the coconut as I don't care for it, but the crunchy cornflakes and pecans adds just the perfect amount of extra flavor! I'll be making this often!
