Salmon Patties I

I used the basic recipe and went from there with suggestions from reviewers. I used 2 pouches of Pillar Point pink salmon--14 Ounces total. I also added another egg, used 2 TB. lemon juice, some chopped red onion, chopped red and yellow mini peppers, some dill in a tube, sprinkling of cayenne, smoked sweet paprika, Tbs. of Dijon and 1/2 C. seasoned breadcrumbs. I used a nonstick griddle pan with just a bit of spray. Turned out great- Incidentally for those who think that those bones in the can are bad--they are not--they have been through the canning process and are totally edible and good source of calcium.

Grilled Indian Pork Kabobs with Sweet Onions and Red Bell Peppers

This was great--We loved it. I would use 1/2 the salt and a bit less cayenne. I broiled the vegies separately and basted them with the marinade that I boiled after the meat was under the broiler. vegies took about half the time as the meat.

Fettucine Carbonara

Like others, I sauted onions and then some garlic in the bacon grease ( 2 Tbs), added 1 C.of frozen peas, 1/2 stick of butter, S & P, parmesan, the precooked bacon,brought it up to very warm, but not to boil, added pasta, stirred well added beaten eggs. Fold until egg sets, but not scrambled. Serve! Yumm.. Grandkids-2 & 5 loved it as well as PaPa.

Gorgonzola Stuffed Chicken Breasts Wrapped in Bacon

I pounded and rolled the chicken It came out rather dry. If I try this again, I will roll it Filet Mignon style. It was easy to do and the parsley,shallot, gorgonzola mixture was good.

Classic Tiramisu

After two tries with this I gave up and tried a different recipe. The sugar just didn't cook into the eggs. It remained gritty. Thankfully, I didn't waste the mascarpone cheese. I would certainly like to know what went wrong!

Tiramisu II

After trying another Tiramisu recipe using a double boiler with disastrous results. This one was a fabulous hit. I used pound cake as all the stores in our area were out of ladyfingers. I also used brandy instead of rum. The custard was divine! I also grated semisweet chocolate over the top instead of powdered. Everyone loved it for Christmas dinner.

Smothered Filet Mignon

My husband looked at me like I was crazy when I said I was going to pan sear this. We have a great barbeque outside, but it was raining. I preheated the broiler to finish it. 90 seconds on each side in the oven proof pan and a bit on the thick edges and then into the oven broiler checking the temp every few minutes. I pulled it out 10 degrees before medium rare, let it sit with the onions and cheese on it until the temp came up to 145 degrees. Wow, soo good.
