Delicious Ham and Potato Soup

I subbed cauliflower for the potato, and left the flour/butter out (pureed the cauliflower/onions/celery for texture) then added cubed ham, carrots, celery. Skipped the milk, finished w grated cheddar and chopped chives -yummy, but starch free for my husband's crazy arthritis control diet. Hard to be yummy and starch free, so thanks for the starting point!

Cranberry Pistachio Biscotti

I love this recipe!! My regular recipe "Cantucci Biscotti," on this site has no added fat but are almost too crispy. I like that this is more cookie-like in texture while still having only healthy fats. I can taste the olive oil, and was pleasantly surprised by how much I enjoyed that! I eliminated the almond extract, adding more vanilla, used pine nuts along with the others, and used whole wheat flour.

Tasty Lentil Tacos

YUMMY!! I used a can of lentils, drained and rinsed, and simmered them with about 3/4 c beef broth. The recipe was really good, my only other adjustment was to add a sprinkle of chipotle chili pepper (my new favourite addition to almost everything!!) I served this alongside the traditional beef for tacos, we decided that our favourite was a scoop of each (even better that way than the beef alone!) This will accompany our beef filling (maybe even try mixing it in the same pan and cooking it together??) everytime we have tacos. Thanks for another great recipe!!

Hummus III

Wow! Seriously good. I have the Summerfresh Foods hummus recipe, and this is WAY better (and way healthier!!!) I only used 1 can of rinsed chick peas, water instead of their juice, roasted my garlic (5 cloves,) added (1/4ts)cumin and (1-2ts)red chili flakes, and the zest of the lemon along with the juice. This is THE hummus (Megan.)

Orzo with Mushrooms and Walnuts

Yummy. I always add chopped fresh herbs, a splash of sherry, chopped celery, roasted red pepper, grated parmesan, etc. (kind of whatever I have on hand.) This most recent time I tried it with quinoa instead of orzo, and it still worked well (and it MUCH healthier!) I will serve this to my clients with grilled chicken or salmon. Thanks for the recipe and the ideas!

Rich and Creamy Roasted Eggplant Soup

I used 3 Asian eggplants, halved lengthwise, 3 (canned) tomatoes and 1/2 a red onion. I subbed fresh rosemary for the thyme, added chipotle chile powder and whole milk for the cream. I garnished with a sprinkle of paprika a few dots of (35%)cream and some chopped rosemary. It looked so gross cooking ("brains and guts," my 5 year old said,)but it turned out SOOO good.

Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

I think it is safe to say that this is the single best recipe I have ever tried off this site. I stumbled across it in the summer, and have been making it all the time ever since. I make a few changes now and again based on what's in my fridge, and to cut the fat, but it is just an incredible salad. I make it as often as we can squeeze shrimp into the budget! If it's just for us, I mix it all together and have it in the fridge, ready to go; if it's for clients or company I assemble right before serving.

Chicken Satay with Homemade Peanut Sauce

I'd give 4.5 if I could. The chicken was very tender, and the peanut sauce was OK... I think I'd sweeten it up a bit and add less soy sauce and more chiles next time, but that is just a matter of personal taste. What I hate about EVERY peanut sauce recipe I try is the reliance on peanut butter!!! The sauces you get in really good thai restaurants don't have that same waxy/silky texture that the peanut butter produces, but I simply cannot find a peanut sauce recipe without it!! Maybe time to create my own (and then post it!)

Mini Pumpkin Muffins with Orange Drizzle

Oh-my-god good. I skipped the pre-cooking step, and prepared these as usual (mix wet, mix dry, mix together, fold in nuts.) I also skipped the drizzle -which I'm sure would have been great, just thought if they're good without it, why add calories?? But seriously really good. Oh, I cut the oil in half, substituting plain yogurt, upped the cinnamon a bit and added 1/4 ts of allspice and about 1/4c chopped pecans. Yummy!

Chicken Soup With Black Beans and Corn

Awesome, healthy, low-fat and absolutely delicious. I love Pam Anderson's recipes, every one I have tried is spectacular! I served these with corn bread muffins. Yummy!

Lemony Quinoa

Yummy! I boiled my quinoa in stock, and found it a bit too intensely flavoured. Next time I'll use 1/2 water and 1/2 stock. I added chopped red pepper and cucumber as well as the zest of the lemon I squeezed. Very yummy salad, thanks for the recipe!

Irresistible Pecan Pie

I cheated and used Tenderflake, and the recipe made 2 almost overflowing pies. I find it strange that I'm the only one with this observation? When I covered it part way through the filling stuck to the tin foil -any suggestions? Based on these troubles I was expecting to be disappointed, but just the opposite, this was wonderful! I added vanilla and about 1 ts flour.

Sukhothai Pad Thai

Yummy. I subbed 2 tb fish sauce for 2 tb of the soy sauce, added extra paprika, more garlic and chile paste instead of radish. I also served all the garnishes (peanuts, cilantro, lime, green onion, bean sprouts) on the side. Yummy, thanks!!

Confetti Barley Pilaf

This was good. I added toasted chopped almonds, raisins, and a few chopped fresh herbs, and stirred them in towards the end of the cook time with the peppers (I like mine a bit crunchier.) Healthy, hearty, good. Served with parmesan tilapia from this site.

Fast and Delicious Black Bean Soup

Not really fast, but very good. I upped the cumin, and added a 1/4ts of coriander as well as some chipotle pepper. I skipped the sour cream, cheddar and chips and it was still very nice.

White Bean Spread With Garlic & Rosemary

I didn't add the juice from the beans (gross!) Instead I rinsed them as usual and subbed some white wine and water. Used as a spread on grilled vegetable and chicken wraps. Yummy, healthy -a new favourite for sure. Thanks for the recipe!
