Martha's Vegetable Beef Soup

Reviewed: Feb. 4, 2006
I NEVER make this sort of thing. The closest is chili. My family was very scared when they saw it and asked for very small helpings. Everyone wanted seconds and one of my daughters said "how come this is so good?" I followed what others had suggested. Beef broth instead of water, 1# beef instead of 1/2 and I browned the hamburger with a med onion and several cloves of garlic. Great recipe!

Creamy Chicken and Rice Soup

Reviewed: Feb. 4, 2006
With some changes suggested by the review this recipe was fabulous. I reduced rice to 1C, reduced margarine to 1/2 C, skipped the celery, added several cloves of garlic, added probably 5 C of milk. It was just wonderful. Keeper!

Baked Corn

Reviewed: Feb. 4, 2006
I would suggest the following changes. 1C sour cream, 1/2 C margarine, 3 eggs. With those changes you have my family's favorite side dish. They can't get enough of this. When I make it for holidays it is more popular than potatoes and I've had to go to making 2 9x13s.

Tofu Fudge Mocha Bars

Reviewed: Feb. 4, 2006
Granted this was my first use of tofu in the kitchen. My husband likes them. No one else really does much but laugh about them. Hopefully in some time my family will get more aquainted with tofu and warm up to it. ?

I cooked my whole potatoes first in the microwave. Once they were cooked through I followed the recipe. I served them at a dinner party. Everyone raved.

Spinach Cheese Appetizers

Reviewed: Nov. 28, 2006
Brought this to a wine and cheese party. Perfect for that kind of event. Very cheesy. A little greasy from the butter. Needs a little something to give it more flavor-maybe not such a mild cheese. Not sure what else. Someone try this and write what it needs.

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Reviewed: Nov. 28, 2006
Used feta instead of blue. The bacon makes it taste strongly of bacon. Will add tomato next time. great recipe!

Shrimp Fettuccine Alfredo

Reviewed: Dec. 1, 2006
Great suggestions in the reviews. I doubled the sauce, kept everything seperate, sauted the shrimp in butter and garlic after the noodles and sauce were done, thickened the sauce with cornstarch and added white wine to thin a bit.

Cheesy Egg Casserole

Reviewed: Oct. 6, 2007
Minor variations: I added 2T of flour to the m.j. cheese and I added 4 extra eggs and 1/2C milk (I made it for 12) because it just looked too dry. I made it for some dearly loved Sunday School teachers to thank them for being so wonderful. It prepared easily and was well received.

Honey Wheat Bread I

Reviewed: Nov. 25, 2008
This has become our family's bread. When everyone is home I find I need to make a recipe every other day. I sub in up to 2 C oat bran flour for the white bread flour. This recipe is so forgiving. Even when I let it rise too long or not long enough, it comes out less than perfect but certainly still tasty. It is such an easy recipe my college daughter makes it often at school.

Pork with Peach and Black Bean Salsa

Reviewed: Aug. 29, 2010
Finally something new to our family that was liked. It's impossible to wreck pork tenderloin so that's a given, but the rest of the recipe was great. I cooked it longer only because my other food wasn't ready and forgot to plan for rice. It worked out because more of the liquid was cooked off in the extra time. This is my husband's kind of food-black bean salsa, etc (that's why I chose the recipe) but everyone else liked it too. keeper

Five Minute Ice Cream

Reviewed: Aug. 29, 2010
I've made this twice now, both times w/ 1/2 and 1/2. I can't wait to try the yogurt/lower fat versions. It was a great last minute new dessert for supper but really only one of my children will get it out of the freezer to eat the leftovers. Second time I didn't food process the fruit long enough and there were chunks which was not as appealing. The fruit was also more frozen the second time (since it hadn't just come from the trip out of the grocery store) and the ice cream was thicker because of it. fast, fun recipe
