Vegetable Fried Rice

This recipe was appreciated by my family sine they were getting tired of plain rice. I added red peppers, celery, onions, garlic, hot pepper flakes and 2 eggs. I substitued the peanut oil for olive since that's what I had on hand. So, our recipe was a variation, but still worked well.

Teriyaki Pork Kabobs

Yum! We LOVED that the teriyaki sauce was from scratch and not from a bottle. The pork was perfectly done when we made it, not dried out at all. Since it's winter right now, we put these in the oven on 350 for about 40 minutes. Yummy!

Summer Bean Salad I

Smoky Chicken Spread

This is one of the FIRST times that my mother-in-law ate one of my dishes and raved about it. Everyone hovered around the table, afraid to try it thinking that it was a crabmeat dish (they don't eat seafood), but once they found out it was chicken, they dived in. I have to say that the smoked almonds are pretty clever! They add a distinctive flavour and texture that is refreshingly unique. A glorified chicken salad that would be wonderful on a toasted multigrain bread too!

Lemon Bread

I've made this recipe twice now and it's fabulous! I double the zest to add extra lemoniness (is that a word??), and also poked holes in the cake so that the glaze would soak in. I also subbed butter for the shortening, used half whole wheat flour and used poppy seeds instead of walnuts. I DID try it with walnuts once, and it wasn't as good as with the poppy seeds - plus only white flour isn't as good as the half whole-wheat. Maybe both walnuts and poppy seeds would be nice? Sooooo good with a cup of warm tea in the evening once your kitchen's all clean!!

Monkey Bars

Very cool name! There's nothing better than saying "I'm hungry. Where are the monkey bars?" Loved the raisins, used half whole wheat flour, the banana part was great (I'd maybe add a full banana next time), but my walnuts were a bit stale - use FRESH walnuts!! My inner child is screaming that chocolate chips in here too would truly make them 'monkey' bars :)

Kathy's Delicious Whole Slow Cooker Chicken

Recipe is very good. A simple meal that is waiting for you when you come home. I'm always careful to cut down the time the cooker runs for though, or the chicken can be overdone - especially if it sits for a while before you get home. I think we cooked this on low for about 5 hours.

Megan's Granola

A wonderful recipe! A few things that we found (as beginning granola makers): The sweetness was quite resonable for a granola. Next time I may cut it down slightly. The only other thing was that our granola didn't 'clump' as I expected, however, we removed it immediately from the pan and other reviewers suggested letting it sit, and that may have been our problem. Having only one baking sheet, it took four rounds to be able to toast all of it. Yummy on ice cream, yogurt and mixed in with other cereals, or eaten all on its own!

Boston Baked Beans

I was so excited about this recipe. This is the second time I've tried making baked beans in my lifetime (using navy beans) and I just can't seem to get the knack of it! Half of my beans are always hard even though I soak them for 8 hours and then put them in a roast pan in the oven for 4-5 hours. What am I doing wrong? I researched how to soak the beans, and the pros said that first you sort out the bad ones, soak the beans for no more than 8 hours or you could ruin that traditional bean 'texture' and throw out the water when cooking (it will have dirt and chemicals in it, plus it removes some of the gas-inducing essence from the beans, while losing next to none of the good vitamins and minerals). Maybe simmering will help afterwards before putting in the oven? Anyhow, we're going to look for a milder sauce as this one was a little spicy for our liking.

Smashed Cauliflower

My family was divided on this recipe. At first I really liked it, but then as I ate more the cheese flavour was really getting to me. If I make this again I'll omit the cheese altogether as others have suggested. Hard on the tummy :(

Chuck's Favorite Mac and Cheese

I'm just not a fan of the homemade mac and cheese. It always seems bland to me! Besides that my family wasn't crazy about the breaded topping. Sorry, but this recipe wasn't for us. We'll keep looking though!

Almond-Crusted Tilapia

O-M-G. . . that's all I can say! I must have REALLY been in the mood for this dish because it was incredible. My husband made it for me along with mashed-potatoes with wasabi and it was TO DIE FOR!! He followed the recipe exactly, except for cutting the parmasan in half.

Roasted Beets and Sauteed Beet Greens

This recipe was very good! I was surprised to find that I actually like beets - one of the last few veggies from my childhood that I haven't retried in recent years. We trimmed the tops back to about an inch or two, left the root on the bulb, wrapped them in foil and baked them on the BBQ like a potato. So easy! Once they were done, we skinned the beets and trimmed the tops and roots. The greens were a bit more of a challenge and I'd make a few changes next time. First, I'd only use the leafy parts and leave out any stems or 'spines' as they stayed crunchy. I'd use half butter and half evoo to add more flavour, and possibly add a squeeze of fresh lemon and white wine. A great recipe as is too! Thanks for sharing!

Grandmother's Buttermilk Cornbread

EXCELLENT flavour. My husband made this in the cast iron skillet and it was really yummy. It came out a bit flat - but I think that was operator error. Might have to investigate with another batch ;)

French Beef Stew

This was sooooo good! It was ready and waiting for me when I got home from work and I have to say that the beef was so incredibly tender. My husband said it was very easy to make, so all you ladies out there - give this one to the men to make and take the night off from cooking!

Pizza Dough III

Awesome recipe! I will use this one again and again. I live in pizza town, and to have the economy tank and still get to have pizza is a godsend! Maybe not as good as the Italian restarants in the woodburning ovens, but still yummy! Very easy - try it! Mmmmmmmm. . .
