Easy Key Lime Pie I

My husband thought these were fantastic. I actually got the premade graham cracker crusts in tartlet size...this recipe was enough for 12 of them - put them on a baking sheet, baked for 23 minutes and then topped with homemade whipping cream sprinkled with a little sugared lime zest (zested 2 limes into a bowl and mixed with a couple teaspoons of sugar and a quick squirt of a fresh lime wedge)

Bacon Wrapped Brown Sugar Smokies Dipping Sauce

My daughter is nuts about these...do burn easy so watch the cooking time...really press the brown sugar into the bacon before cooking...lined my baking sheets with foil and clean us was easy...gone first at holiday get togethers.

Grilled Halibut with Cilantro Garlic Butter

Loved it! Added just a smidge of white wine and maybe a tablespoon more butter because of that addition. First thing my husband said was "this is a keeper".....

Gourmet Mushroom Risotto

I used about a half a cup of finely diced onion instead of shallots...I let the onions carmalize for about 10 minutes in the oil/butter before adding the rice. I had a 10oz. package of portobello that I sauteed and that seemed the right amount, I added them with the last ladle of cooking liquid to let the flavors meld a little (I did also use beef stock instead of chicken). I didn't have any chives and thought it was fine without it. This was the first time I have made risotto, loved how it turned out and will be having fun trying different variations.

first time I ever worked with phyllo dough...easy enough after reading the side of the box...crazy good...this would be great for company but was fantastic for just us too...opened somet really good wine to go with it...will make again and again...would not change anything...

Lasagna Soup

Had this with a salad and corn on the cob - the soup was easy to make, not fussy ingredients. The flavors really do mimic lasagna. The cheesey yum is fantastic in it. My family of four all gave it a thumbs up. The pasta did soak up most of the soup liquid by the time it cooled down and I was putting the left overs away, but I figure I'm just going to put the leftovers in a casserole dish dotted with a little of the cheesey yum, maybe throw a little mozzarella on it at the end.

Made this just as written, loved the way the potatoes tasted roasted...may try putting some roasted garlic in too next time, but will be making this again....went great with grilled steak and salmon for dinner.
