Grapefruit and Avocado Salad

Orange Pork

I cut boneless pork loin chops in halve lengthwise, sprinkled with garlic powder, browned in vegetable oil, transferred to glass 9X13, than made the sauce in the skillet (I added about a couple tablespoons of brown sugar) and poured over pork. Baked in oven at 350 for about 30 minutes. Made a harvest medley rice and roasted some carrots while it was cooking. I got no complaints from anyone, there were no leftovers...it just lacked something I can't put my finger on...I would have liked some red pepper flakes in it to give it a slight zing...but family is not into it...will use recipe again and tweak a little more, but it was a good place to start.

Gourmet Mushroom Risotto

I used about a half a cup of finely diced onion instead of shallots...I let the onions carmalize for about 10 minutes in the oil/butter before adding the rice. I had a 10oz. package of portobello that I sauteed and that seemed the right amount, I added them with the last ladle of cooking liquid to let the flavors meld a little (I did also use beef stock instead of chicken). I didn't have any chives and thought it was fine without it. This was the first time I have made risotto, loved how it turned out and will be having fun trying different variations.

Mini Cheesecake Bites

Made these for my husbands birthday today, cheesecake is his favorite but trying to cut down a little on calories so thought these might satisfy without breaking the bank, so to speak. Since these are small, once they're gone, they're gone. I used 8 oz. low fat cream cheese and 1/2 cup of low fat Cool Whip and also doubled other ingredients. I also added about a tablespoon of orange liqueur per another review...came out great, husband loves...I posted a pic, used the phyllo mini shells since I had on hand. I did taste the filling before adding the liqueur and was maybe just a little bland, and maybe that was because of the low fat ingredients, but that's why the 4 stars...will make again.

Mexican Corn on the Cob (Elote)

Super Yummy...just added some cumin and chlli powder to the mayo and then sprinkled all with a little paprika for presentation...everyone grabbed so fast from the platter I didn't even get to snap a photo...

I'll make them again, but I think next time I would turn the oven down and cook longer, or maybe do in the crock pot as the beans were still a little firm, I like them a bit softer to chew. Also might add a touch of vinager to them next time. Husband loved them though.

Easy Key Lime Pie I

My husband thought these were fantastic. I actually got the premade graham cracker crusts in tartlet size...this recipe was enough for 12 of them - put them on a baking sheet, baked for 23 minutes and then topped with homemade whipping cream sprinkled with a little sugared lime zest (zested 2 limes into a bowl and mixed with a couple teaspoons of sugar and a quick squirt of a fresh lime wedge)

Lasagna Soup

Had this with a salad and corn on the cob - the soup was easy to make, not fussy ingredients. The flavors really do mimic lasagna. The cheesey yum is fantastic in it. My family of four all gave it a thumbs up. The pasta did soak up most of the soup liquid by the time it cooled down and I was putting the left overs away, but I figure I'm just going to put the leftovers in a casserole dish dotted with a little of the cheesey yum, maybe throw a little mozzarella on it at the end.

Grilled Salmon I

While I don't eat salmon myself, my husband and our guests all loved this...I did add a smidge more brown sugar than called for - when tasting the marinade before I added the fish I just thought it could be a little sweeter...

Bacon, Sour Cream and Dill Potatoes | Cinnamon Spice & Everything Nice

Made this just as written, loved the way the potatoes tasted roasted...may try putting some roasted garlic in too next time, but will be making this again....went great with grilled steak and salmon for dinner.

Broccoli and Cheese Stuffed Shells

Made according to directions. May family has long been a fan of stuffed shells and were generally pleased with these, although they did mention they like the sauce with the meat better (I usually add browned italian sausage to my red sauce, but then again I usually make my own and for this recipe I did use Paul Newman's Marinara sauce)...I'll make again and just use my own sauce next time...

Bacon Wrapped Brown Sugar Smokies Dipping Sauce

My daughter is nuts about these...do burn easy so watch the cooking time...really press the brown sugar into the bacon before cooking...lined my baking sheets with foil and clean us was easy...gone first at holiday get togethers.
