Beef Barley Vegetable Soup

I made some alterations to keep the whole thing in the slow cooker. I have to say it come out better, especially the second day, than I thought it would. I got a very chunky, meaty soup, but it took a long time to get the potatoes and carrots done. Also, it needs more barley, which got lost in all the rest of it. We also found that adding a little lime juice helped a lot to brighten the dish. All in all, not bad, quite tasty, but an all day affair. It could do with some re-working.

Easy Slow Cooker Pork Chops

I added choppped red pepper, a little salsa and sliced zucchini and about a 1/2 cup of water for a better gravy. The veggies and gravy was very good, but the meat was disappointingly bland. I don't know why, but I felt the meat needed something more. The next day I made a pot of rice to go with the veggies and gravy and it was great.

Shepherd's Pie

I've been looking for something like this for quite a while. I liked the taste of this, but I thought it was a bit too soupy, not as firm as I would have liked. First of all, I added chopped onions, garlic and celery to the beef as I was browning it. I also added some oregano and Worchestershire sauce. I cooked it down until it was nearly dry before adding only one can of cream of mushroom soup. I thought a second can would make it too wet and I'm glad I did. Also, I added a little cream to the potatoes because I thought they were too dry. I also over salted a little. But all in all, it was pretty good and quite filling.

Roasted Pork Loin

Of all the recipes I've rated here, this is the first one I've given 5 stars to. It's easy, relatively quick (you can go do other things while it's roasting) and comes out delicious. My leftovers were gone by the next morning. I left out the wine, but plain water worked just fine. I added some chopped onions and mushrooms to the roast's casserole dish then reduced the liquid in the pan while the roast rested, then added a little corn starch/water mixture to thicken. Very good.

Busy Day Chicken Rice Casserole

A little salty for my taste, but not bad. It's certainly quick and easy. I used Cream of Broccoli soup, which worked very well with a side dish of california blend vegetables. This could easily be adapted for any meat.

Baked Ziti I

Iowa Pork Steak

I modified this after a first try making it according to directions. While both turned out pretty good, my modification included sauteeing the onion first then doing the whole thing on the stove top. I think that worked better.

Round Steak and Gravy II

Egg and Sausage Casserole

Pretty good. Certainly easy and quick. Could have used more eggs, less cheese and oregano. Also would have benefitted from some sauteed onions and maybe a touch of milk. I thought the top browned too quickly, but that could have been my oven. Overall, pretty good but not the best.

Debdoozie's Blue Ribbon Chili

A good basic recipe with plenty of room for one's personal adjustments to taste. I picked this out because I hadn't made chili in a long time and wasn't sure I knew how anymore. This gave me an excellent starting point with which I could then add to it to make it my own.

Dijon-Tarragon Cream Chicken

Very good. Worked just fine with dried tarragon (just add a little more). Sauce thickened nicely, would not have minded a little more to spoon over veggies on the side. This is really a 4-1/2 star recipe, maybe even 4-3/4.

Bub Bub's Hearty Mush

I was surprised that this dish went over as well as it did. This would be a good basic idea for leftovers. You could use almost any combination of vegetables and meat, heat 'em up and put over rice and have a decent, quick meal. If I do this again, I'll stir fry the whole thing in the wok with some soy sauce without any additional salt.
