Pumpkin Apple Streusel Muffins

Just took these out of oven. Made almost as recipe states; got 12 regular size muffins and 24 minis. Used one large Granny Smith apple, grated, and cut sugar by 1/4 cup. Everything else I followed as recipe states. Super moist and delicious. Keeper. :)

Two Ingredient Pumpkin Cake

I used spice cake mix, canned pumpkin, added one egg, 1/4 c water (to clean pumpkin can, dumped in 1/3 cup or so of cinnamon applesauce I had in the fridge. Put them in the Kitchen Aid and mixed them for about 3 minutes. I think these are the bomb! Super light and delicious! I mixed up a little glaze but they don't need it. Will definitely be trying this with other cake flavors soon.

Bread and Celery Stuffing

First time making stuffing, used Pepperidge Farms Homestyle White -- cut into cubes and dried overnight, then toasted for 10 mins or so in a 200 oven. Combined all, put in my Pampered Chef round stone, refrigerated, then lightly covered with aluminum foil to bake for 35 mins. Perfect. Many, many compliments. And soo easy.

Cake Balls

We made these with devils food cake, vanilla frosting and dipped them in real ambrosia chocolate (on clearance after Xmas in the grocery store!). I crumbled my slightly warm cake into a bowl, added only 1/2 can of frosting -- you may be tempted to add more -- don't do it. You'll end up with wet and mushy insides. I set the bowl in the fridge for an hour, then scooped the dough with my cookie scoop, froze them for 1 hr and using toothpicks, dipped them into the chocolate. I filled two cookie sheets; some I made with my small scoop and I made a dozen or so with my large scoop. We stored them in the fridge for the whole DAY that they lasted! I'm sure they could be frozen but mine didn't last long enough! Will be making again soon ... they looked and tasted like something you bought in a bakery.

Linguine with Chicken and Sauteed Vegetables

The whole family enjoyed this -- even the picky 4 yr old! Next time I will only use 1/4 cup of olive oil as I thought it was a bit oily. I used broccoli, carrots and onions and put them in my metal steamer which I submerged in the pasta water for 45 seconds and removed before I cooked the noodles. Then while the noodles cooked, I fried the chicken, then added the veggies, then tossed it all together in a bowl and it looked great. This will be a regular for us! Thanks for sharing!

Pizza Casserole

I made this minus the green pepper and it was one of the first meals that pleased my husband, me and all four kids! No leftovers, darn. This is quick & easy; served ours with garlic bread. This is a keeper.

Michelle's Peanut Butter Marbled Brownies

These are so-o-o-o good. I reduced the cream cheese to 4 oz (1/2 of a box) and added a bit more peanut butter. These are thick and rich and delicious. My guests emptied the pan on Sunday and a day later I'm making them again for another party. Fabulous.

Cake Mix Cinnamon Rolls

These were great! I mixed the dough in my KitchenAid with the dough hook. It took alittle extra flour as the dough was somewhat sticky (5 cups). I probably ran it three or four minutes to knead it all in, let it rise, rolled it out, and made 20 of the best cinnamon rolls. I, too, skipped the nuts on top and instead frosted them with a cream cheese frosting. Delicious -- and even better the next day!

Nacho Cheese Sauce

This is great! Just what I was looking for -- the kids love this with their nacho chips. Not too spicy for them, just right. And so-o-o much cheaper than the nacho cheese dip you can buy in the can that you have to microwave. So easy, teens can make this themselves!
