Old-Fashioned Chocolate Fudge

Really good - I didn't make it best the first time but it tasted so good. So I will make again. Not sure what went wrong - when I took them to a friends they seemed melted. At my place they stayed solid - so maybe it was too warm at the friends?

Mom's Zucchini Bread

Yum. Delicious. I made it a little healthier with flax meal for the eggs and applesauce for the oil. Very good. Used rose molds and cooked for 40 min - perfect

Beef Brisket My Way

A great recipe for a winning brisket! This was so easy to make. Ended up marinating for 2 days - don't know that it was necessary, but that is what ended up happening. Only change I would make would be to add more veggies. It came out so tender. Think we will use the left overs in tacos. Yummy.

Second time making it I made some changes - used left over ham diced small instead of bacon, 1 cup of 2% milk instead of cream, .5 to .75 cup of mexican cheese and saute a large shallot instead of the onion. First time it was too rich. I would even use it with fat free milk.

Garlic Sauteed Artichokes

Yummy! Easier to make this way. Saute onions with minced garlic in olive oil and butter. Squeezed half a lemon on artichokes. Added the artichokes to pan. When adding the water I added the other half of a lemon and some more butter. They could have cooked longer. Will make again.

Baked French Toast

Did change it - so based on that I loved it. Used thicker slices - about 1.5-2". Also, used only 6 eggs, 1 1/4 cups of milk and 1 cup of cream. Not too sweet. Delicious.

Beef Bulgogi

3 out of 4 enjoyed this. I didn't have all the ingredients, but I will say this is a great base that you can add flavor to suit your tastes. I do recommend to freeze the meat, then cut it up. I did and it made it easy. It marinated for a few hours. I do not have a grill but I was able to quickly stir fry it. Next time I will stir fry some onions and peppers with it.
