Apple Pie by Grandma Ople

Reviewed: Nov. 28, 2008
This pie was absolutely delicious! I made it yesterday for Thanksgiving and everyone at dinner raved about it. I used Ida Red apples (what I had on hand) and added 1 1/2 t cinnamon, 1/2 t nutmeg and 1/4 t allspice to the syrup. Then I poured 3/4 of the syrup over the apples in the crust, put the lattice top on and poured the remaining syrup over the lattice. My husband, whose favorite dessert is apple pie, says this one is "AWESOME!" :)

Homesteader Cornbread

Reviewed: Oct. 14, 2008
This cornbread is delicious! I halved the recipe and baked in an 8x8 pyrex pan for my husband and I to go with chili. It is incredibly moist with just enough sweetness to balance out spicy food. I'm making it for a second time tonight and can't wait to eat it!

The Best Meatloaf

Reviewed: Jul. 14, 2008
I followed the amounts given in this recipe, although added a few more spices and used bbq sauce instead of steak sauce. My husband loved the flavor, but I was dissapointed with the texture - it stuck to the pan despite being a greased, non-stick pan, and fell apart - was quite crumbly. So, I'll be looking for something moister that sticks together better, for my husband to make sandwiches with.

Blonde Brownies I

Reviewed: Jun. 23, 2008
Yum! These remind me of butterscotch brownies I used to make as a kid - chewy, buttery and delicious! I added a touch more vanilla and only about 1/2 c chocolate chips based on personal taste. Also, instead of mixing the wet and dry ingredients separately I melted the butter in a medium mixing bowl, added the brown sugar, vanilla and egg and then just dumped in the flour, baking powder, baking soda and salt - voila, a one-bowl brownie recipe! I like not having to do as many dishes so I can spend more time enjoying these yummy blondies. :)

Peanut Noodles

Reviewed: Jun. 23, 2008
I love peanut-sesame noodles but was really dissapointed with these. I reduced the soy sauce as others mentioned but still found the sauce way too salty - the soy sauce basically overwhelmed the sesame and peanut flavors. I'll be looking for a different recipe; if I do try this one again, I'll only add 1 T of soy sauce or perhaps just sprinkle a bit on top of the finished dish.

Grilled Fish Tacos with Chipotle-Lime Dressing

Reviewed: Jun. 22, 2008
This marinade is amazing!! My husband and I couldn't get enough of them. I didn't make tacos or the dressing, just marinated the tilapia fillets all day and then cooked them on an electric griddle. They were delicious with my favorite avocado corn salad. We'll definitely make these often! Next time we want to try the dressing too.

Bodacious Broccoli Salad

Reviewed: Jun. 10, 2008
I love this recipe but gave it 4 stars because I changed a few things. I used half mayo and half plain yogurt, and instead of red wine vinegar used about 1.5 T white wine vinegar and 2.5 T apple cider vinegar (because I didn't have any more white wine vin, but I like it this way!). I also decreased the pepper as others said, used vidalia onion, about 1 c cheddar and omitted the bacon because I'm a vegetarian. This was a great base recipe and absolutely delicious with the changes I made - I also added Craisins, which were delish!

Easy Valentine Sandwich Cookies

Reviewed: Feb. 11, 2008
I was very dissapointed with this recipe. I followed it exactly, and used confectioner's sugar instead of flour to roll it out. The dough was absolutely delectable, but the finished cookie didn't have a great taste, was very brittle, and spread a lot during baking, making the cutout tops unusable because the shapes were all messed up and didn't look like hearts anymore at all. I much prefer the Best Rolled Sugar Cookies recipe from this site which I made at Christmas, they cut out beautifully and retained their shape while cooking, also have a better taste and not such a crispy/brittle texture.

Berry Cornmeal Muffins

Reviewed: Dec. 30, 2007
These were excellent! I made them with organic french vanilla yogurt and frozen organic peach slices, chopped into small pieces (not quite 2 cups though, more like 1 - 1 1/2 c). I also reduced the cornmeal to 1/2 c and added 1/4 c wheat bran. They were delicious warm and also good the next day - I reheated them in the microwave for 12 seconds for breakfast - yum! Next time I think I will try substituting applesauce for the melted butter.
