Loved this recipe. I get requests to share it from guests and love how I can do all the prep ahead of time and just let it cook through our busy afternoons.
I made it with just a pound of chicken, 2/3 jar of salsa, 2 T cilantro, juice from 1 lime and half the taco seasoning. It wasn't too spicy for my kids and the higher salsa to chicken ration made it moist, not dry. It was delicious and plenty of food for four adults. I have cooked it twice once on Low in the slow cooker and once on High for the shorter amount of time. Both worked great and the chicken shredded beautifully. I used a taco seasoning recipe from this site since I already had the spices in my kitchen.
