quite yummy! I gave it 4 stars b/c I modified it. I used baby eggplants and zucchini, roasted instead of fried and I added a layer of potatoes to the bottom. Will definately make this again!

Downeast Maine Pumpkin Bread

I too followed the review of MOM2SIXGREATKIDS and made 24 muffins. They just came out of the oven and they smell AMAZING. They taste pretty good too. I added a little bit of brown sugar. I would have liked a little more spice to it and a little more moist. I think next time I will sub all of the oil for applesauce and use 1/3 more spice.

Best Chocolate Chip Cookies

my dough was runny and my cookies spread off the cookie sheet. they tasted okay, but not the best. I may try them again. I really like the recipe for "award winning chocolate chip cookies" found on this site. A little cakey, but this is my family's preference.

Crab Quiche

I am giving it 4 b/c of the alterations. I used canned crab and added, 1 tsp each of garlic powder, onion powder, old bay, and parsley. I substituted fresh chives from my garden for the green onions. Will definatley make this again, maybe tweak it a little more. Thanks for a great base recipe!!!

Avocado-Shrimp Salad

nice and simple! I used a handful of spinach as a base and added cucumbers and chopped orange bell pepper. I squeezed half of a lime all over and added a little bit of garlic powder too. I'll be eating this again soon.

Strawberry/Rhubarb Crumb Pie

I made this for Mother's Day and twice since. My mom LOOOOVED it. I did need to add a TBSP of corn starch to the mix b/c my berries and rhubarb were VERY fresh and VERY juicy. My grocery store now carries frozen rhubarb so I can make it year round :)

Food Processor Chocolate Whipped Cream Frosting

this was perfect! I added some Whip It so that it wouldn't get runny after sitting for awhile. I tried dark chocolate powder, which made for a very ugly, yet tasty topping for my vanilla cupcakes. My BF strongly dislikes sugary sweet frostings, but he LOVED this, he actually fought me to lick the bowl :) Definately a keeper!

This recipe is great just as it is. However, to bulk it up a little I added ground italian turkey sausage to the sauce and thawed/drained frozen spinach to the cottage cheese blend. Definately a keeper. Will remake soon!

Slow Cooker Chicken Taco Soup

I made this yesterday, ate it today and it was pretty darn good. I didn't have any beer, so I used chicken broth. I didn't have black beans so I used cannellini beans. I also substituted frozen corn for canned. I will definately make this again. Will probably tweak to add a little more flavor.

Too Much Chocolate Cake

I personally do not care for chocolate cake of any kind, but OMG, this is great! I made this for the BF's b-day and it was a hit! He asked next time go without frosting b/c the cake itself was so tasty. I followed the lower fat suggestions of light sour cream, 1/2c milk and 1/2 oil. I topped it with the chocolate cheese frosting. I also cooked it in two 5" springforms at 350 for 45 minutes and they turned out perfect. There was leftover batter, so I made 6 cupcakes too. I will absolutely be making this again!

Best Brownies

these were pretty awesome. I made the frosting, but never used it, the brownies were great without the extra sweetness. I did add dark chocolate chips to the mix and will try nuts next time. I think I may use the frosting recipe in the future for cupcakes. will definately make these again!

Mini Cheesecakes I

Delish!!! Used a graham cracker bottom instead of nilla wafers based on other suggestions. Used regular cupcake pan instead of mini. My dad has already asked me to make more! I will be trying the white chocolate variation next time :)

Greek Orzo Salad

Yummy yummy! The BF and I gobbled it up! I am giving it 4 stars b/c I changed some of it. I used reduced fat feta, cut back the orzo and increased the veggies to make it a little healthier. Used the non-marinated artichokes and subbed 1/2c balsamic vinegrette dressing. Also subbed kalamata olives for true Greek flavor. Didn't used the parsley b/c I didn't have any. Will definately use it next time.

Zucchini Brownies

these had an 'essance' of zucchini when I bit into it. I followed the ingredients and directions, but ommitted the frosting. I may try again and do some tweaking. I love brownies and w/o the frosting, these make a great low fat option

Sun-Dried Tomato Basil Orzo

Super yummy. We ate every last bite of it and plan on making it again very soon. My sun-dried tomatoes were not packed in oil, and 1 tbsp of oil was just enough.

Cream Cheese Squares

absolutely wonderful! I used vanilla sugar instead of cinnamon on top. I also added lemon juice and lemon zest to the cream cheese mix. My only complaint was that they got a little mushy the next day after being in the fridge. I will not cover so tightly next time!

No Bake Double Good Dessert

to answer someones question. Confectioners sugar is powdered sugar, usually in a box rather than a 5lb bag. Frozen whipped topping...a container of Cool Whip, thawed. Made this recipe with my pre-k class, left out the PB b/c of allergies, and it was still wonderful! My kids loooved it, especially b/c they did all the work!

Rempel Family Meatloaf

yummy! This is the first meatloaf I ever made and I totally impressed myself. I used the suggestion of another reviewer by adding the glaze of ketchup, honey, and wosteshire. I think it actually tasted better the next day!

White Chocolate Raspberry Cheesecake

I made this for V-Day and it was just so-so. I used 3 mini heart shaped springforms, maybe this had something to do with the taste/texture. The BF said that it wasn't one of my best :( I will try this again, but in a 10 inch springform and will follow the suggestions of gringing oreos in the food processor. At least it looked pretty!
