I'm a young mom and wife. I used to do counseling as a career, now I stick to family life. I love it!
My favorite things to cook
I love baking. I also love appetizer foods, pastas, mexican food, and easy dinners that are healthy.
My favorite family cooking traditions
Right now, it's including my 4 and 2-year old daughters in everything I cook. They love adding the ingredients, stirring, putting together a pizza, etc.
My cooking triumphs
Many rave over my risking original and unusual recipes at family events...they're usually a huge hit. This past Thanksgiving my extended family was quite impressed with how much they enjoyed the meal, and even called it "gourmet."
My cooking tragedies
Running out of cooking spray and using foil instead, doesn't work...I'll say that for sure.

Almond Chicken Casserole I
I make this often. I leave out the water chestnuts, but other than that, it's great as is. People always love it and want the recipe.

Honey Wheat Bread I
Very good. I was looking for something that would replace store-bought loaves and not be too dense or dry. I used 3 cups wheat flour and 2 cups bread flour instead. Also used 6 tsp vital gluten, increased the honey a bit, added about 1/4 c. ground flax, 1/4 c oats. Will definitely make again.

Health Nut Blueberry Muffins
Amazingly good! They do taste healthy, but the banana adds a natural sweetness, and they stay moist and are filling. I had to subsitute about 1/4 c. ground flax seed for wheat germ, and doubled the oats in place of oat bran, and they still turned out great. I'll definitly make them again. They were just what I was looking for. Thanks!
