Coconut Cream Pie I

Wow, so tasty and so easy! After reading the reviews, I changed a few things. I used a graham cracker crust, used unsweetened coconut and fresh whipping cream. The pudding is ultra sweet so mixing in unsweetened whip cream cuts the sweetness nicely. The toasted coconut on top like the picture shows is a nice touch too.

Carrot Cake

Wow! Probably the best carrot cake ever! I served it for a birthday party and everyone raved. I added a few golden raisins and used unsweetened coconut. So moist but not greasy at all, this recipe is a keeper.

Curried Hummus

Wow, so great and zingy! I felt like hummus but I didn't have any bread in the house so I made it into the best salad ever. I left the chick peas whole, added some pine nuts,raisins, diced red pepper and cilantro. I would take it to a party it was so good.

Pot Stickers (Chinese Dumplings)

Great recipe. I did mine without the shrimp (didn't have any) and added orange zest for an incredible flavor. I used my bamboo steamers and skipped the frying stage to save time and calories. If you put the pot stickers on lettuce leaves in the steamer, they won't stick. Serve them with a dipping sauce of soy sauce, rice wine vinegar and white suger.
