Peanut Butter Vegetable Chicken Soup

Reviewed: Jan. 5, 2010
Loved the flavor!! I too hesitated before adding peanut butter-what a nice surprise!! Probably added 1/3 cup. I did not have all veggies called for; used carrots, celery, potatoes, onion, red pepper and peas. Used combo of beef and chicken broth because it was all I had and added cooked orzo. Will make again.

Peppered Bacon and Tomato Linguine

Reviewed: Jun. 23, 2009
Very quick and easy. Good flavors. Did not use the bacon grease, instead used a little olive oil. I also used 28oz can of diced tomatoes and more green onion and garlic and added bacon just before serving to keep it crisp.

No Bake Cookies I

Reviewed: Jun. 2, 2009
Great recipe. I have the entire track team hunting me down for these since my kids requested them to take as snacks. Everyone loves them. I used some old fashioned oats as well as quick oats, otherwise followed exact recipe. Thanks for tip about boiling time, must time 1 min. when full. rolling boil starts. Similar to no bake V-they may be just a touch better than this recipe.

No Bake Cookies III

Reviewed: Jun. 2, 2009
I've made no-bake cookies for the past few track meets(about 6x in past 3 weeks). This recipe is pretty good, but no bake cookies V is better and kids liked that one more than this one.

No Bake Cookies V

Reviewed: Jun. 2, 2009
I have made these at least 6 times in the past two weeks for track meets, all my kid's teammates expect them now. Tried other recipes, but this one is the best. I used a mixture of old fashoned oats and quick oats.Otherwise followed recipe exactly. Key to cookies turing out is the boiling time, I set timer for 1 min. once the full, rolling boil starts. Have wax paper ready before you start too.

To Die For Blueberry Muffins

Reviewed: Mar. 19, 2009
Awesome!!! My changes,I used Splenda for sugar in batter, 1 cup wheat flour for 1 of the cups white flour, 1/3 cinnamon applesauce for oil. I also added 1 t. baking soda & 1 T. nofat dy milk(because of using splenda-baked goods do not rise as well without these additions when using splenda.) Topping: used 1T butter, 1/2t cinnamon, 1 T brown sugar, 3T quick oats, it was enough for 12 regular muffins(do not have jumbo pan). Reduced baking time by about 5 min. Greased and floured pan too!

Spinach and Rice (Spanakorizo)

Reviewed: Mar. 10, 2009
As a Greek-American family, we eat this often, especially during lent and as a main dish. To improve the cooking method given, try this: saute rice along with onion add minced fresh garlic too, then add boiling water, cover and simmer for about 10 minutes, then add spinach and tomato sauce, fresh parsley, fresh dill, salt and pepper. Cooked COVERED on low heat and add fresh lemon juice when it's done cooking. Beside the cooking directions, this recipe is authentic.

Loved it!! I also made changes/additions as others. Used butter, not shortenening. Doubled recipe, added 1/2 cup cinnamon applesauce and then streusel topping(oatmeal, brown sugar, cinnamon). With half the batter I made mini muffin-bake 10 minutes turned out great too.

I have this recipe, but this one is missing Crumbled gorganzola cheese and dried cranberries. They make the salad even better.

Pasta with Kielbasa and Sauerkraut

Reviewed: Jan. 6, 2009
It is a good kielbasa and sauerkraut recipe, most of the times I've been served it there was no flavor at all. This recipe has great flavor and good combo of ingredients. I skiped the pasta, since we're trying to watch carbs,it was still good without it.

Asparagus and Mushroom Frittata

Reviewed: Mar. 8, 2008
Wonderful recipe. I added red onion, since I had one already chopped, used less oil/butter . Also after cooking vegtables in skillet,I put them into a greased(PAM)glass baking dish, and poured beaten eggs(8) over veggies. Baking time was increased by about 5-8 minutes due to my changes. Will save this recipe for sure.

German Brotchen Rolls

Reviewed: Feb. 25, 2008
I made these for my daughter's German language class. Make sure you have a few hours to devote to making these. As with any recipe make sure you read all directions before you begin. Good rolls, especially right out of the oven, but I've never had Brotchen before, so I cannot compare them to the real thing.
