Ham and Bean Soup II

Made this soup yesterday, and it tasted incredible. I did not find it in the least bland...I did however use the bag of 15 bean soup mix I had purchased instead of the navy beans, but not the seasoning it came with. I simply shook in a prodigious amount of the spices called for, plus a pinch of salt. A delicious soup, great with cornbread muffins.

Big Soft Ginger Cookies

I made these at Xmas time and they were excellent!! I then lost the recipe and panicked until I found it again today. *lol* I did not have cloves on hand so used pumpkin pie spice instead. Also I scoop the dough with my ice cream scoop for nice round balls, and roll them in sugar then flatten them a bit. they look so uniform, like store bought cookies! I generally fill up 2 or 3 gallon ziplog freezer bags and try to freeze them so I don't eat them all. :) They do stay amazingly soft. My mother in law loved them so much I had to print the recipe for her while I was visiting. Amy, thank you for sharing this cookie!

Cinnamon Chicken

I've been making this dish for over 2 years now and just love it. I don't even measure anymore, I just sprinkle and go. Good on a Grorge Foreman grill too, seasoned side down, if you use boneless skinnless breasts.

Broccoli Chicken Casserole I

This is a delicious caserole! I did do a couple of things differently though. I used a family sized can of Cream of Mushroom soup, and added 2 tablespoons of Mayo instead of 1, and I added garlic powder, onion powder, salt, and black pepper to taste in the soup. I also added chicken boullion cubes while boiling my chicken, then used the broth to make 2 cups of stuffing mix, which I broke up and spread on the top, then I sprinkled dry stuffing lightly over all that. My husband came home late and ate it cold and STILL raved about it!

Chicken A La Orange

This was a very easy one to make. The orange sauce complimented the chicken very well, but I did not enjoy it over rice. My husband (who is not hard to please!) liked it very much. Instead of making it from scratch again, I am keeping the leftover orange sauce for the next time, and will just simmer the chicken in it.
