Ground Beef Wellington

Tried this for dinner tonight. Turned out okay, but had to do some modifications. The biggest issue I had was the sauce recipe as written was too thick for my taste. Had to thin it out when reheating. The meat tasted a bit bland and the onions still tasted kind of raw, but would definitely try this again with some adjustments. Possibly will cook more mushrooms and onions to add to the meat mixture before baking. I did an egg wash on the top of the Wellingtons and really liked the way they turned out. Also thought the meat cooked well in the pastry, so was very pleased about that.

Slow Cooker Cranberry Turkey Breast

Just made this tonight for the first time. WOW, it is delicious! Served with mashed potatoes and asparagus. Felt like an "upscale" meal with very little effort. The turkey was sweeter than I expected, for some reason, but balanced with vegetables and potatoes, it all worked together. Definitely will make again! Thanks!

Cooking Light magazine's Indian Chicken Curry

I made this recipe twice now. It is so good. I did add 1 cup of coconut milk and reduced the water by 1 cup as well. Oh, I played around with the spices, too as it was too much cayenne pepper for my tastes. I was disappointed at first because it looked very watery, even after cooking for 1 hour, however as it cooled it really thickened up. It tastes great the next day, too!
