Veronica's Hot Spinach, Artichoke and Chile Dip

I haven now made this half dozen times. Everyone loves it. You can make it as spicy or as mild as you want. I'm not sure the mayo is actually necessary and I have used 1 box cream cheese and 1 box of neufestel (sp?) cheese for a slightly less rich taste.

French Baguettes

This recipe is wonderful. I have now made it close to a dozen times, using the bread maker on the dough cycle. I prefer one large loaf with the ingredients as written. Placed a 9 x 13 pan 1/4 full with water as oven is preheating to 425 degrees and bake for 20 minutes. So easy and much cheaper than buying bread.

Cream of Spinach Soup

Just finished making this for the third time and it is still delicious. Followed other suggestions and sauteed almost a chopped onion and 4 cloves of minced garlic with the butter. Then added the flour and whisked. Used 3 cups of chicken broth, 2 cups of 1% milk and 1 cup of heavy cream. Pureed half the batch of soup. Serve with French Baguettes from this site.

Fresh Strawberry Pie I

Not sure what went wrong but my pie came out tasting like jello in a pie crust. I used the 2 tbs of cornstarch as called for but maybe it needs to be increased.

Prize Winning Baby Back Ribs

These ribs made a mess on the grille from falling off the bone! Slow cooked in oven on 175 for 5.5 hours and then grilled them. Excellent!

Boilermaker Tailgate Chili

Fantastic chili despite having to make changes based on what I had in the kitchen! Was good even though I did not have any cayenne pepper or paprika. Only used 2 cans of chili beans as a preference. Used 2 seeded jalapenos instead of chili peppers. Forgot all about the Worcestershire sauce, only had 2 beef bouillon cubes on hand and cooked 3 slices of bacon instead of bacon bits. And used 3/4 bottle of beer. Ate with bread bowls from this site.

Bread Bowls

These are great! I made in my breadmaker, 6 cups of flour was too much and the dough rose out of the machine. Used bread flour instead of regular flour and will half the recipe next time. Used butter instead of shortening and only a 1/4 cup sugar. Could have used more salt. I took another reviewers advice and separated dough into oven safe bowls to help the shape. Put too much in each bowl so my bread bowls were too big (only used 3 bowls). Used egg white wash before baking and rebaked for 10 minutes after removing the insides. Filled with boilermaker tailgate chili from this site...delicious!

Spicy Sweet Potato and Coconut Soup

I don't know what I did wrong but this was definitely lacking. The sweet potato did not add to the dish at all and I would leave it out all together next time. I also added shrimp and scallops. I used a combo of green and red curry paste so it wasn't too hot for others to eat but I also added sriachi sauce and did not get that hot...I added more to my own bowl. I served over sticky rice.

White Bean and Artichoke Salad

I love this salad! I've made it multiple times and the recipe is easily suited to taste. I use 2 cans of cannelloni beans and one can of garbanzo beans, one chopped vidalia onion, both marinated and regular artichoke chopped, 1-2 cloves of minced fresh garlic and season to taste with the basil, mint and thyme (either fresh or dried)

Greek Pasta

very good. I added the olives, marinated artichokes and feta after I covered the pasta with sauce. Probably could use some italian seasoning, garlic salt.

Summer Nights Eggplants

This recipe is a good start but needs to be made to suit your tastes. Since I was only cooking for me, I used one smaller eggplant, 1 small onion, 2 cloves garlic, 1 roma tomato, 1/2 green pepper. I added dried parsley and oregano and a little garlic/wine seasoning salt. I just eyeballed the olive oil. Instead of bread crumbs, I used couscous. I had plenty of leftover stuffing mix.

Tasty Green Beans

Fantastic green beans! I omitted the butter and the salt. Used olive oil only to saute the garlic and onions and simmered for 15 minutes after boiling the beans for 5 minutes. I also used a combination of soy sauce and worcestire sauce to cut down on the salt.
