Maple Pecan Shortbread Squares

These are so quick and easy....and delicious!Definitely double the recipe and put it in a foil lined 9x13 pan for easy removal. These will now be part of my Christmas baking!

Hmm...not great. WAY too much sauce on the top (I will half this next time) and the meat was really bland. I think I'll be adding some spices...but it is a great base recipe. Thanks!

So good! Tastes like its from a restaurant. I love olives...but I didn't like them in this. I thought they were a bit overpowering against the seafood. I will definitely be making this again! (without the olives)

No Bake Chocolate Oatmeal Cookies

Mmmmmmmmm :) So good! I was so excited to find a recipe for cookies without sugar and it did not disappoint! My husband was in heaven. I will definitely be making these again...and again...and again! Going to try them with real peanut butter next time :)

Vegetable Whip

This was really good. It had an almost leek and potato soup taste. I thought I cut the carrots smaller than the rest but they were still pretty hard when the rest was done...so make sure you cut them REALLY small for more consistent cooking. Thanks!

Awesome Spicy Beef Kabobs OR Haitian Voodoo Sticks

These were great! I reduced the cayenne to 1 1/4 tsp and marinated for 2 hours and they were deliciously spicey. Skewered them with mushrooms and onions. I will definitely make them again!

Grilled Eggplant and Feta Farfalle

First time using eggplant and I really enjoyed it! Great flavor (even without the mint, which I didn't have)...but not saucy enough. I will add some tomato sauce next time...probably about 3/4 cup. Thanks though!

Muscat Gosht (Lamb in Spicy Tomato Gravy)

My first attempt at cooking lamb and I wasn't disappointed! The color is a bit pale but tasted really good. Might add some tumeric or chili powder next time to make it a little more vibrant. The lamb gets nice and tender though! Thanks :)

Maple-Garlic Marinated Pork Tenderloin

This was really good! I bought a bunch of pork tenderloins when they were on sale, marinated them, and then froze them. This is the first one I've eaten and it turned out great! Freezing also worked really well. Just place the tenderloin and marinade in a plastic bag, seal, mix, and freeze. Let thaw in the fridge and then cook as per directions (or bake @375 for 45 minutes). I will definitely make this again!

Rhubarb Cake II

I was pretty disappointed when I first tried this. The cake doesn't seem to set, so its all slightly gooey. The taste is good though, and I have been enjoying eating it straight from the freezer. I don't think I'll be making this again.

Strawberry Cinnamon Oatmeal Muffins

So I read through all other reviews and made the following changes to the recipe: substitute stawberry yogurt for the oil, up the cinnamon to 1 tsp, add some chopped walnuts (they make a huge difference!), and make sure to cut the strawberries really small, so the muffins don't turn to mush. They turned out really well and I'm enjoying them for breakfasts in the morning. I found they stuck to the muffin cups when they were hot, but once they cooled I had no problem. They also froze pretty well. A keeper for sure!

Dill and Honey Pork Chops

This is a nice simple way to prepare pork chops. Because of the reviews I added a little bit of margarine to the pan, reduced the heat to med-low, and added a bit more dill on each side. They're a little plain, but still tasty.
