Vegetarian Korma

Totally, absolutely delicious. The only change is to use slightly less cream. (3/4 or 1/2 of a cup.)

Roasted Beets and Sauteed Beet Greens

This was delicious exactly as is! Only changes I might make (tho not necessary) would be to maybe mix the greens with spinach and sprinkle Gorgonzola cheese on top.

The Best Banana Bread

Only used about 1.5 cups flour. Did half white sugar, half brown. Added .5 tsp vanilla extract and a dash of cinnamon. Also didn't have baking soda so I used 2.5 tsp baking powder with a tiny dash of salt (about 1/8 of a tsp). Cooked for about 52 minutes. (Did 45 at first, but it was still wet inside.) Next time I will definitely be adding chopped walnuts to this! It tastes great!

Old Fashioned Potato Salad

This was so good. Didn't need to use extra mayo as some suggested. Not dry in the slightlest. (Maybe our potatoes were smaller? I don't know!)We only used two eggs, but everything else was the same. (Three eggs would have been just as good tho.) Some people didn't like the celery, but I thought it was great in there. I'll definitely be making this again!

California Coleslaw

Pretty good! I accidentally bought red cabbage, but I think it came out pretty awesome. I think some of the proportions in this recipe are a little off because this definitely yields more than 6 servings. Also, I had a head of cabbage (approx 4 lbs) and it may not have been "small" enough because I only used about half of it with the rest of the portions staying the same, except a little extra carrots. I might also not use up all the dressing next time, as there was an excessive amount of liquid left over. Either way, it was still very tasty and I will definitely be making it again.

Roast Sticky Chicken-Rotisserie Style

This is fantasitc! We only used a 3.6 lb bird so we cut all the ingredients in half (and then half again for the salt). It cooked for 3.5 hours and was sooo tender and juicy. Tasted fantastic. We will definitely be making it again. (Also, after it roasted, I sprinkled a little Tony Chachere's on it and that was great!)

Zucchini and Potato Bake

This was good, but nothing amazing. I might have picked out potatoes that were too large, or zucchini that was too small, but the ratio of potatoes to zuchhini was overwhelming. I didn't think the dish was too mushy or soggy as some other reviews. I believe my boyfriend mixed the veggies around a little when he made this dish. Next time we will use 3 potatoes and 2 zucchini and 1 summer squash and an onion. And maybe some carrots or eggplant. This isn't a dish I'd make to impress anyone, but it's definitely a nice hearty homecooked side to have around and I'll probably be making it (with adjustments) again.

Taco Seasoning I

This seasoning is awesome. Never buying from a packet again. Only difference is that we used Ancho Chili Powder instead of regular Chili Powder, only because we had some extra on hand. Made this with about 1.20 pounds of ground turkey and added some water while cooking since there wasn't enough fat to have it mix in all together.

Baingan Bharta (Eggplant Curry)

I'm giving this recipe a five because of the way I made it. It was a three until we added curry paste and it made ALL the difference in the world! First the changes: We followed the recipe almost exactly except for that I couldn't find any ginger garlic paste, so I finely minced ginger and garlic and essentially made the paste myself. The only other change was that I've used curry powder in the past, and it never has enough flavor/kick so I substituted garam masala. I also ended up baking the eggplant for 20 minutes, which seemed to be perfect. Lastly, we added spicy curry paste. Now the complaints: Be careful when cooking it on high for 10 minutes because it began to burn a tiny bit on the bottom. It's a good idea to mix it up halfway through. It smelled delicious when we were making it, but when we tried it something seemed wrong. It was just so bland and had this odd yogurt taste that dominated the dish. We had some curry paste laying around and added that and the dish became fantastic! I'm not sure if we would have gotten the same results by just leaving out the yogurt, but it worked out nicely and is a dish I will absolutely be making again! Next time I will also add some peas into the mix! (And possibly cut the salt in half)

Vietnamese Fresh Spring Rolls

These were just meh... Nothing really exceptional about them and my boyfriend thought the mint was a little strange in there. (Tho I didn't mind it too much.) These were pretty bland and felt like they were truly missing something. Tho they weren't *bad* I doubt I will use this recipe again if I make these.

Penne Pasta with Veggies

This recipe is great with a few modifications. I only used 3 TBS of butter. I omitted the olive oil and instead tossed the pasta with 1 TBS of the oil from the sun dried tomatoes. I will also probably only use 1 cup of sun dried tomatoes instead of 2, just out of personal preference. I also added 1 cup of cut up mushrooms, which I thought went perfectly with the rest of the dish. I also probably didn't use as much cheese as the recipe called for, but it was still fine. Next time I will be sure to cover with aluminum foil while baking, as the dish comes out a little dry if it's not covered. Overall, really delicious. I will definitely make this again!

Winter Fruit Salad with Lemon Poppyseed Dressing

Tasty! I substituted praline pecans for the cashews and blue cheese for the swiss cheese. Next time I think I will just use plain pecans and probably cut down a little bit on the sugar because it's very sweet. However, everything goes really well together.

Portobello Mushroom Stroganoff

This was absolutely delicious. I used portoabello, crimini, and shitaki mushrooms and used only 1/2 a cup of sour cream, added some cloves of garlic, and added a little soy sauce.

Sweet and Savory Kale

I wasn't a fan. They weren't crispy enough. Also, I think the taste was a little off on some of them. Probably will tweak the recipe more. Although the boyfriend loved them.
