Grilled Portobello Mushrooms

I made this following recipe ingredients and quantities. However, it was rainy so I made a last minute change in cooking method and sauteed the mushroom caps, then added the topping and broiled for about 5 minutes. This turned out good, but lacking the zip to make it great. I saw from the reviews that a lot of people added cheese, and I think I'd do that next time too, as well as some sauteed onion and perhaps even some crumbled bacon. This was good enough that I'd like to try it again with some additions, so thank you for the recipe!

Sweet Grilled Peaches

I hate to be the voice of dissent, but this really didn't turn out for me at all. I followed the recipe exactly: used frozen peaches, cooked over a medium gas grill for 10 minutes, flipping after 5 minutes. Well, when we opened the packet, the peaches were still cold, but everything had a smoky, burnt smell and flavor, although nothing was visibly burned. We put it in the oven for about 10 minutes, which warmed up the peaches a little, but the taste was still kind of smoky/burnt tasting. The texture and color was beautiful, but everyone in our house ate around the peaches and only had the vanilla ice cream. Thanks anyway for the recipe.

Chicken and Potato Parcels

Good flavor. We added zucchini and cooked it on the grill. Our chicken did end up a little overdone and the potatoes a little underdone. I tried to leave big chunks of chicken and little pieces of potato to avoid this problem, but I guess if we try this again I'll have to use a larger size difference in my pieces. I think in the future, though, I'd omit the potato and cook it separately.

Robin's Quinoa with Mushrooms and Spinach

I didn't love this. I thought the white wine flavor was too overpowering. Probably just personal preference, though. I may try it again without the white wine. Thanks anyway, quinoa recipes are few and far between!

Lamb Feta Peppers

I decided to cook the lamb prior to stuffing the peppers to reduce the amount of fat from the lamb and also to keep the peppers from getting over cooked (I like them to still be a bit crispy). I only cooked them for about 20 minutes since the filling was totally cooked and warm already before stuffing into the peppers. The taste was good, but not super great. Thanks, though, for a good meal!

Cod Fish Cakes

This was pretty good! I left the fish and potatoes in a small dice and stirred together rather than mashing. I added about 1/4 cup of matzo meal to help it stick together. They did fall apart slightly, but still looked pretty good and tasted great! Thanks!

Grandma's Peach French Toast

I used 9 slices of sandwich bread, ripped into pieces to make it easy to serve. I found this worked perfectly with the other recipe quantities...it wasn't too wet or dry. If I made it again, I'd also cut up the peach slices as well to make it really simple to serve. My husband and I both thought this was a little too sweet, and my 2 year olds both didn't eat any, so while I thought this was pretty good, I probably won't make it again.

Simple Chicken Parmesan

Very good! The sauce was especially easy and tasty. I used the leftover the next day for a calzone and it was super, so I think I'll be using this as a pizza sauce, too. Thanks!

Ham and Cheese Quiche

Quite yummy! I diced some leftover baked ham to use rather than the canned ham. I also omitted the swiss cheese since I didn't have any. Also used whole milk. Otherwise followed the recipe...yum! Thanks!

Spinach and Rice (Spanakorizo)

Super! Really wonderful. I only used a 9 oz bag of spinach since it took forever to de-stem and I ran out of time to add any more (probably because I had two 18-month old "helpers"). It was still plenty spinach-y although I might try to add more next time. And, halfway through the recipe I realized I was out of white rice so I used a risotto rice. It turned out fine, but again, next time I'll try to follow the recipe. I served this as a main dish with feta and lemon on top, and pitas and hummus on the side. My husband and I both loved it, as did one of our toddlers (oh well, you can't please them all). I'll definitely make this again. Thanks for the yummy dinner!

Veronica's Apple Pancakes

So, so good! I've made this twice already and everyone in the family really loves it. I've just used one apple each time. Once it was a little over a cup, once a little under, and both times it turned out fine. I grate the apple with the skin still on, and you don't really notice it. My only very slight complaint is that I usually make double recipes of pancakes and freeze the extra so I can just pop them in the toaster in the morning for a quick breakfast for my toddlers. Well, for some reason these don't taste very good reheated. Oh well, it's worth making fresh whenever we need some apple pancakes! Thanks for the yummy recipe!

Chicken Katsu

Very good! My husband made this and followed the directions, although he ended up needing more of all the breading ingredients, and used less oil for frying. It seems like everyone has a tonkatsu sauce recipe. Here's mine for a tangy, yummy sauce: 1/4 c. ketchup, 1/3 c. soy sauce, 1/4 c. worchester sauce, 1 tbsp hoisin sauce, garlic powder and pepper to taste. Thanks for the recipe!

Dressed-Up Broccoli

This was ok. Nothing was wrong with it, but I like plain broccoli better. It was just broccoli with some crispy garlicy topping. Wait, as I type that, it sounds awesome again. I'm not sure why we didn't like this more. My husband suggested it needed more butter so it would stick better to the broccoli. It mostly just fell off. I was thinking it might be better to saute the garlic first so it's not such a sharp garlic taste. I don't know, the idea is good, but the execution just didn't turn out right for me. Thanks anyway!

Chicken Tortilla Soup I

This recipe was even better than I expected it to be! Very, very yummy! I made a few changes: I used regular chicken broth in place of the condensed chicken broth and water since my supermarket doesn't carry condensed chicken broth. I also had to omit hominy, so I doubled the corn amount, again because I couldn't find it. Otherwise I followed the recipe, delicious! Well, except I omitted the cilantro due to personal preference. Thanks for the delightful recipe!

Fabulous! I followed the recipe exactly, a rare occurance for me. Only change I'd make in the future is to cut back on the butter. With all that butter and cheese, it was a little greasy. The tasty was great, though! Thanks!

Dee's Roast Pork for Tacos

This was good, but I'm hoping someone will post specific instructions for using a crockpot. Do you have to add some liquid? I decided to add a cup of chicken broth because I've never cooked anything dry in the crockpot. It turned out good, but not great. I'd be interested to try this again if I did it incorrectly in the crockpot. I gave it five stars so as not to unfairly decrease the rating since I think I might have messed it up...as I made it, probably only 3.5 stars. Thanks for the recipe.

As that most famous of (imaginary) Danes once said, "To eat or not to eat, that is the question." Or something like that. Well, I vote "to eat"! This was outstanding. I made some slight changes: omitted the shortening, used ground turkey, and doubled the amount of garlic and mushrooms (plus used fresh sauteed mushrooms). Otherwise followed the recipe, and it came out perfectly! Thanks!
