I'm a stay at home mom to twin boys who were born July 2005. While I never cooked much before they were born, I'm enjoying it now that I'm home all day and have a little extra time. Well, as much free time as two babies leaves me!
My favorite things to cook
I like to make recipes that are forgiving; where I have the ability to add and subtract ingredients according to our tastes. Or where I can make a mistake and the recipe is still salvagable. As a result, I'm not much of a baker where more precision is needed!
My favorite family cooking traditions
I used to love making a zillion different kinds of Christmas cookies each year with my mom. Every year I say I'll make some Christmas cookies of my own...maybe this will finally be the year!
My cooking triumphs
I considered any meals I made during the first three months after having twins to be a triumph. Who cares how the meals tasted! Now I consider it a triumph if my boys don't just rub the food in their hair. My husband is the most wonderful test audience for my cooking. He's not picky, always appreciative, and dare I say, a little surprised that I've cooked. I guess never cooking in the first eight years we were married makes him really appreciate my cooking now!
My cooking tragedies
My cooking tragedies are many and usually amusing. Most recently, I decided to make a Texas Fudge Cake for book group when my boys were 3 months old. I don't know what I was thinking, I just really wanted a Texas Fudge Cake. But, of course, the boys started crying right as I started making it. I was interrupted so many times while I was making that cake, I have no idea how many mistakes I made. I am pretty sure I only put in half the required flour and sugar, though. Oddly enough, it still cooked up and looked like a cake. So, I brought it to book group still unaware of my mistake. Until we served it. And everyone took a big bite. Of the grossest fudge cake ever. Everyone was really nice about it, though, and I laughed so hard I almost cried. And then stopped for a twix bar on the way home to fill my chocolate craving!

Easy Eggnog Ice Cream
Way too bland and got crystallized since there's no alcohol in the recipe. It needs at least the alcohol in a teaspoon of vanilla extract! I made a second batch with a tablespoon of bourbon and a swirl of crushed graham crackers, and it was much improved. Certainly an easy ice cream recipe, but pretty disappointing as written.

Zucchini Brownies
I love these! They turn out more like cake when I make it, but it's the best cake I've ever had! And the frosting is delightful as well. Make sure you don't drain the shredded zucchini...include all the liquid!

London Broil I
Turned out perfectly! Quite delicious! I scored the meat with a knife (about 1/8") in a criss cross pattern, rather than use a fork.
