Broccoli-Cheddar Stuffed Meatloaf

It was pretty good, but I didn't think there was enough cheese. I would probably alter it next time by using the frozen broccoli and cheese sauce and then adding some additional cheese maybe. All in all, pretty good. I didn't, however, make the sauce. It didn't sound very appealing to me, so I just left it out, and served the meatloaf with veggies and mashed potatoes.

Carrot Cake I

I don't know why it said to use a bundt pan, especially since the picture shows a round cake pan...so I used a 8x8 glass pan, and it took FOREVER for this to finish. When it was FINALLY cooked through, the outside had a very burnt look and feel, almost carmelized. I had to reduce the heat of the oven for the last 1/2 hour or so just to get it cooked through without completely ruining it. I think it should be specified how long to cook it in 2 round cake pans, not a bundt. The flavor itself of the cake wasn't that great either, even after I cut off the burnt edges. I also thought that it had a bit too much carrot in it? Also, I used my own frosing- 16 oz. cream cheese softened, 1 1/4 cups powdered sugar, and 1 tsp. vanilla. The frosting was the best part! I used the leftover frosting on some yellow cake cupcakes I made the next day. I wouldn't make this one again. I'll keep searching for "the perfect carrot cake" recipe. My search does NOT end here.

Bloody Mary Chicken

I really hate to say it, but we didn't like this one bit. I cooked it on low for 6 hours, and it was still dry... Here's what happened. I made it just as it says here, but with some onions, celery and green pepper added in, and a little garlic. So, when 6 hours was up, I tasted the sauce. YUCK. So, I removed the chicken, and added some cornstarch mixed in cream and a little bit of cream cheese to try to a) thicken it up and b) give it some kind of flavor! Alas, my efforts were fruitless. It still didn't have much of a taste, and like I said the meat was stringy and dry. Oh well.

Killer Cheesecake

I actually divided the batter in half and made it plain and peanut butter chocolate swirled. It was a bit dry, but that was my fault because I used muffin pans to make heart shaped cakes (valentine's day) and wasn't sure exactly how long to bake for. All in all, it was a nice taste.

Basic Pasta

I didn't actually get to use this because I don't have a pasta machine or roller. I would highly recommend using a roller or machine, otherwise it can be nearly IMPOSSIBLE to roll the dough out thin enough. Otherwise, I'm sure this would taste lovely- this is the basic recipe my grandmother uses all the time.

Awesome Slow Cooker Pot Roast

I loved this recipe. I only used about 1/4 to 1/2 cup of water, and one can of cream of mushroom. My roast was about 4 pounds or so. I also used dry onion/mushroom soup mix. I cut up some potatoes and threw in some baby carrots on top. Cooked on low according to directions, and meat came out tender, juicy. Gravy was wonderful. My boyfriend swore up and down he didn't like pot roast, but he is converted. He asked for this one again really soon!

Abby's Chicken Rollatini

Eh. That's really all I can say about this. Like everyone else, I was expecting something really spectacular because of the rating. I found it bland, even though the chicken was coated in parmesan cheese. I didn't really like the taste very much, and my cheese kind of oozed out a little bit as well. Won't make this again.

Baked Oatmeal II

I make this exactly as indicated, except substitute sliced apples for the cranberries because my husband prefers apples. It is VERY good and it's a Sunday morning favorite. Thanks to the review suggesting 1/4 cup butter and 1/2 cup applesauce- I was looking for a lower fat version and now I'm going to try it!

This was a nice quick treat for my daughter. I tasted it as well, and liked the tang. She said it tasted too sour so we added a bit more Truvia. With skim milk the calories come down even more. I would send my husband off to work with this as a quick breakfast. I wouldn't, however, have a 300+ calorie snack.

A Little Bit of Everything

When I made this, I wasn't thrilled with the taste but something about it screamed BOLOGNA! So I tossed a slice of fat free bologna in a container with the sauce (I quartered the recipe) and let it sit overnight. I grilled up the slice of bologna for lunch today and it was REALLY great. The vinegar gives it a tang, and for some reason this really pairs great with bologna. Yes, I grilled bologa!

Minted Carrots

I didn't feel that this was a bad recipe. For my taste, it was a bit sweet but it was a nice and simple glazed carrot recipe. I steamed quickly in the microwave, used light butter, splenda brown sugar, and slightly reduced the honey. I felt it could use more mint flavor. Perhaps it could be obtained by steaming the carrots with the mint or even putting the mint in with the butter to infuse and make more of a "mint butter" prior to adding the carrots and remainder of ingredients?

Marian's Delicious Strawberry Sauce

Simple, quick, and tasty! I made it healthier by substituting Truvia for the sugar, and because I did not have fresh strawberries on hand (which is rare!) I had to use frozen. What a nice topping for the coconut pineapple light ice cream we have in the freezer!

Mrs. Payson's SPAM® and Grits Brunch Casserole

This shocked me! It was really quite tasty. I was originally put off by the SPAM idea, but was able to "lighten" this up a bit, to about 220 calories for a decently sized portion. I used 2% milk cheddar cheese, fat free plain yogurt, and turkey SPAM instead of regular SPAM. Also, I had fresh tomatoes on hand so I diced those up instead of using canned, and just microwaved my grits because I had a few packets in the pantry. I would make this again but my husband wasn't even interested in trying it. He said he was put off by the look of it.

Crescent Pizza Pockets

As always, easy, fast and super easy to customize. We're vegan, so are crescents! Just subbing in vegan cheese and vegan pepperoni made these vegan (and great). I like to roll the toppings into the crescents sometimes, too. customize with any veggies or other pizza toppings you like.

BBQ Chicken Crescents

I'm rating it 4 stars for its ease of preparation and the abilty to customize however you choose. I made it a bit healthier using the reduced fat crescents & non fat cheese. The taste will definitely depend upon the bbq sauce you choose to use, as that is (naturally) the main flavor.

Campbell's Kitchen Baked Corn Casserole

We really enjoyed this casserole. I used light soup and egg whites instead of whole egg. We also left off the fried onions because we don't care for them. The result was a lighter version with a texture like a spoonbread. Delish!
