About this Cook
I married my high school sweetheart and we have a beautiful daughter. I work from home as an executive assistant to my stepfather. I love shopping, reading, writing (I am the recently appointed West Palm Beach Cheap Eats Examiner- http://www.examiner.com/cheap-eats-8-in-west-palm-beach/kristen-kelley), and of course cooking and baking!
My favorite things to cook
Any italian food, mexican or tex-mex food, quick and easy recipes, and I also love to attempt gourmet and interesting dishes- but I have to be careful because I have a picky eater to feed (my husband!). I love putting my personal twist on old favorites- adding things, taking things out...and I'm always creating a new cream sauce. I have a weakness for cream sauce!
My favorite family cooking traditions
I have always loved how my mother and I come together to prepare meals for holidays and parties. I also have always loved how my grandmother always made the same things every holiday (i.e. stuffed shells and easter bread for easter, lasagna for christmas...etc.).
My cooking triumphs
My taco bake, my homemade mac and cheese, my alfredo sauce, and my turkey meat loaf! YUMMY.
My cooking tragedies
Italian honey balls! I should have had my grandmother show me how to make these before moving from NJ! I burned most of them (oil was too hot) and they ended up tasting like doughnuts. I also melted a plastic spoon and stunk up the apartment in the process!

Roasted Beet, Avocado and Granny Smith Apples Tower
I agree that this definitely needs some sort of dressing, but did enjoy the freshness of the apple against the creaminess of the avocado and earthiness of the beet. Being vegan, I used a vegan aged raw cashew cheese which made this dish a fully raw vegan dish, which was nice. I make a sugar free fat free maple mustard vinaigrette that is to die for that was really nice atop this stack as well. My husband also had trouble deciding how to dig into this, as the previous reviewer mentioned. He picked it up and bit (LOL). I cut into it with a very sharp knife and fork, but fully expected it to collapse like Jenga (it did). But it still tasted nice.

Dogs loved these, and just used a "flax egg" instead of egg to make these vegan :)

Skillet Mac and Cheese & Kielbasa
I made a couple tweaks too. In addition to using vegan cheese and making a roux and creating the cheese sauce that way, I subbed in vegan kielbasa (which I pre cooked in sauerkraut) and skipped the breadcrumbs. I love how versatile this recipe was, and it gave me so many ideas. Different cheeses, different proteins, added spices, etc. I never know what to do with kielbasa besides just grilling or cooking in sauerkraut. I never would've thought to put it in mac and cheese or to even serve it WITH mac and cheese. It's a nice jumping off point, and very kid friendly.
