Pumpkin Whoopie Pies
Great! The only change I made in the recipe was to substitute 1 cup of vegetable shortening for the vegetable oil. Even though I know that vegetable oil helps to keep baked goods moist, I felt that the vegetable shortening gave them a better texture.
My filling consisted of 2 cups confectioner's sugar, 1/2 cup shortening, 1 teaspoon vanilla extract. Then, I add warm water, one tablespoon at a time, until the filling reaches the consistency I want.
