Oatmeal Chocolate Coconut Chewy

I made these today and they came out awesome! I only had 2 1/2 cups of oatmeal, no coconut and no vanilla (substituted rum flavor). My husband kept on sneaking them and saying "oh yeah, these are keepers" so they passed his taste test - and that's saying something since he's not much of a cookie eater. This is the first time I can remember (in 15 years together) that he's stolen cookies as I made them.

Upside-Down Coffee Cake

This cake is huge! Use a very large pan. A 9 x 13 or even larger if you have it will do the trick or a 12" spring form pan. I started the layers in an 9" square pan but had enough cake batter left over to bake another cake so I just added some frozen berries and a strussel topping and made a second cake with the left over batter. The cake rises up a lot and the sauce will run over if you don't have a deep enough pan. I learned this the hard way and ended up having to clean my oven. The cake is tasty but the taste of the peaches I used was lost somehow. I was disappointed that the flavour of the fruit was lost so probably won't make this again as an upside down cake although I might use the batter part to make two "coffee" cakes with fruit in the batter and a strussel topping.

Hungarian Mushroom Soup

Golden Cheddar Muffins

I used half and half all purpose and whole wheat flours. I didn't have any buttermilk so I used milk with a bit of vinegar to sour it. I also chopped up some left over bacon and added that. The muffins came out very well, tender and delicious. They would probably have been even better with buttermilk. I will definitely make these muffins again - with or without the buttermilk!

After-Christmas Turkey Potpie

I forgot to add the thyme and used a "white" sauce made with chicken stock instead of the soup (didn't have it) and this was still delicious. Definitely a keeper.

Scalloped Potatoes and Onions

Very nice flavour. Found you don't need to cook for the suggested 2 hours. 1 hour is plenty, but you should check them for tenderness. Made a small change by adding some freshly grated nutmeg to the sauce for a slightly more french taste.

Grandma's Yorkshire Pudding

This was my first attempt at Yorkshire Puddings. My DH loved them. Leftovers were great the next morning warmed and topped with strawberry jam. This one is going in my "keepers" recipe box.

Sensational Strawberry Shortcake

I am giving this recipe 4 stars because everyone else at my house liked it but, honestly, I thought it was only worth about 1 star. Perhaps 40 minutes is too long to cook the "cake" but it was dry and hard. The egg white on the top of the cake stops the moisture from the cream and strawberries from merging with the cake so if you like a dry shortcake this is good - I like the juice from the strawberries to go into the cake so this is not the cake for me.

You didn't say how much sugar or butter or almonds for the topping so I took a guess. Other than the missing ingredients in the list, the cake was very good. 5 Stars for flavour and 3 stars for the recipe composition.

Coconut Meringue Cake

The cake was great. We had company coming over one evening so I made it in the afternoon. There were only 3 pieces (from 16) left when the evening was over - so 5 people ate 13 pieces of this cake. One of my guest even asked if I would make the cake again and bring it to her daughters baby shower. It was a big hit.

A Drama Queen's Pavlova

I had 3 egg whites to use up so I decided to make this recipe (cut in half). It was not what I expected. The beaten eggwhites just fit into one pan so if you make a whole recipe you're going to need 2 pans. Also, it stuck to the pan and I had to break it out (perhaps this was my fault because I greased the pan when it didn't say to do that). And finally, the coconut was just "wrong".
