Big Soft Ginger Cookies
These cookies are dangerous! You will want to make these again and again. Doubling the recipe also works well ;) I tried the orange juice substitution for H2O once but I didn't notice any difference. I used butter instead of margarine since I never use margarine. I put the mixture in the freezer for about a half hour, as suggested by other users. This really helps with forming the dough into balls. I use one of those cookie dough scoops. I've added crystallized ginger (probably about 1/4 cup chopped) to the mixture and also little bits to the tops before baking (squish em down into the top). This is quite nice if you like crystallized ginger.

Napa Cabbage Salad
Made for a potluck and everyone loved it. I followed the recipe exactly except for adding an additional package of ramen noodles, but boiled, to the mix. Will definitely make again.

Pumpkin Cream Cheese Muffins
I didn't really change anything in this recipe except using some pumpkin pie seasoning as well as cinnamon. All components were used up equally. I would probably make more cream cheese mixture if I make again. This recipe is a little time consuming with mixing 3 different things and adding the 3 different mixes to the muffin pan. BUT it was fun and they turned out really great. I wasn't at home when my husband tasted them and he had to call me to tell me how awesome they were. He also emailed me the next morning to say "they may be the best muffins in the world ever".
