Black Bean and Salsa Soup

PHILLY Creamy Basil and Red Pepper Pasta

I think this recipe is pretty good for a roasted red pepper sauce. You have to like peppers for this one. I too added about 2 cloves of garlic, salt and pepper to the mixture. I mixed it all in my food processor-didn't feel like getting the blender down. At the end I mixed the whole wheat pasta with the processed pepper mixture and warmed it through. I then added a bit of cream to finish it and about 1/4 cup of parmesan cheese. I also didn't add chicken because I didn't have any defrosted. Quick and easy.

Fluffy Peanut Butter Frosting

The BEST peanut butter frosting ever...and I've tasted quite a few. It's not too sweet and it's super fluffy. Make sure and take the time to beat it for a few minutes. It makes quite a bit of frosting. Oh so good!

Incredibly Cheesy Turkey Meatloaf

Very tasty. I over cooked my shrimp (so easy to do) but that was my fault. I served it over rice that I had seasoned with butter and lite soy sauce.

One Bowl Chocolate Cake III

Very good cookie. I gave it a 4 because they were not as chewy as I had hoped. Overall a little too sweet. I would cut back the sugar by 1/2 a cup.

Hamburger Vegetable Soup

This soup was good. I do believe the sodium could be lowered by using low sodium broth and less of the soup mix. The fat also could be lowered by using lean meats such as turkey or ground chicken. Overall, very tasty.

Fabulous Zucchini Grinders

Fantastic! Here's how I made mine: I couldn't find the right bread so I bought small ciabatta rolls. I cooked the zucchini with red onion. I pre-toasted the rolls as suggested. First I put a little shredded cheddar cheese on the bottom of the roll, then topped with the zuchinni mixture and then topped with american cheese. Baked for 10 mins. My family loved them!!
