Crispy Herb Baked Chicken

This was good with several modifications. I added 1 tsp of Italian seasoning, 1/2 tsp of garlic powder in lieu of garlic salt and 2 dashes of paprika to the breading. I only used 1/4 cup butter and still had some left over so will use less next time. I used drumsticks and removed the skin. I baked the chicken on a rack in my baking pan and flipped them after 30 minutes. The drumsticks came out crispy all around and tasted very good. My wife loved it. I will definitely be making this again soon.

Mexican Potato Nachos

Made this tonight for the Super Bowl and everyone (even the kids) liked it. It has been requested for dinner another night soon. I cut the potatoes into 1/4 inch slices as I think 1/2 would be too thick. At 1/4 inch you have to be careful picking them up but they work without falling apart. Thanks for the recipe.

Chicken and Bok Choy Soup

Everyone in the family loved this soup. It has more flavor than I expected. I made a half batch but wish I made a full one for leftovers. I used 32 oz of chicken broth for the half batch instead of the water and bouillon. I kept everything else the same. Will definitely be making this again soon.

Pesto Quinoa Wraps

My wife is a vegan so I am always looking for new ideas. I came across this and showed it to my wife. She was a little sceptical but ate every bite once it was made. She was surprised at much flavor it has. I made a few small changes. I used red onion instead of regular and used basil pesto as it's all I had.

Shrimp Scampi V

I made the decision to cut the wine in half as I was making this. There was just so much of it that I felt I would be wasting it. I let it reduce a few minutes and combined it with the drained pasta in a large bowl. Everyone thought it was restraunt quality.

Delicious Ham and Potato Soup

This soup is great. My 3 year old had seconds. I used fat free milk, very low sodium chicken bouillon and no salt and it was very good. I only used 1/2 tsp of pepper and left it up to my family to add more. No one did. Thanks for this great recipe.

Spicy Orange Beef

Neither my wife nor I cared for this. I believe I followed the recipe correctly but this did not taste like orange beef we have had before. Trying to put it into words, I believe it was just too strong. Maybe too much sherry. We both love spicy foods and this really could have used more spice, but that wasn't the problem.

Lemon Pepper Chicken and Gravy

This was very easy to make. My wife didn't think it she would like since it had chicken gravy in it, but she did. I used 2 jars of chicken gravy sauce instead of the 4 packets as the jars were on sale.

Award Winning Chili

I have made this recipe 4 or 5 times in the past 6 months. It's very good and freezes well. I add a can of low sodium chicken broth and 2 small cans of no sodium tomato sauce. It's a little too thick otherwise. Great recipe.
