About this Cook
I love, love, love to cook, but unfortunately my crazy scheduled does not allow much time for this. And my husband absolutely hates to cook! So when I am home (and have all the available ingredients), I love using this site to find inventive new things to try.
My favorite things to cook
I love to bake: cakes, cookies, and the like. However, now that my husband and I are slimming down and getting healthy, I am more interested in learning to cook healthy alternatives for dinner. My favorites are Greek food, Middle Eastern and Italian pasta dishes.
My favorite family cooking traditions
Growing up, my family & I (seven of us in all!) sat down to dinner every single night. I hope to continue that tradition with my family, and my husband and I sit down and eat dinner together every night.
My cooking triumphs
I am willing to try just about anything. I am getting acquainted to my crockpot, since everyone raves about how easy it is to cook with one, and I have had great results. I also make great homemade cookies (never the slice-and-bake)!!!
My cooking tragedies
Most recently, I cooked Thanksgiving dinner from start to finish by myself. I had never cooked a whole turkey before in my life, but was determined to try it. I didn't know how long a turkey needed to thaw, and didn't thaw it all the way through. Then I didn't know how long to cook it, and overestimated the cooking time. The top of the turkey was dried out, and the bottom was still raw. It was quite disgusting! I'll stick with turkey breast next year.

Slow-Cooker Chicken Tortilla Soup
This is delish! Made it exactly but included 1 can of black beans. Served with cheddar cheese and sour cream.

Slow Cooker Italian Beef for Sandwiches
Delicious! Used beef broth instead of water, and added sliced peppers and onions for the last hour of cooking. Made into sandwiches and added slices of white cheddar and broiled for 2-3 min. More calories for dinner than we usually eat, but will reserve for special nights.

Hot Peanut Sauce
As written, I would say 4 out of 5 stars. I added 1 tablespoon curry, 1 tablespoon chili powder, fresh garlic and salt. With those additions, 5 stars. A keeper!
