Cheesy Beans and Rice

Fantastic! For 12 servings I used a 16oz jar of mild salsa instead of 2 14.5 cans of diced tomatoes with green chilis and I added 2 tbsp garlic powder to the bean and rice mixture.

Chef John's Deviled Eggs

The yolk was raw in the middle and the shell stuck to the egg. I wasted a dozen large eggs and did not serve deviled eggs, as an appetizer, for Easter. Bummed!

Microwave Corn on the Cob

Chili Verde

Buffalo Chicken and Roasted Potato Casserole

This was our 2013 Superbowl Dinner with guacamole and non-fat sour cream on the side. I omitted the salt, used Kraft non-fat shredded cheddar cheese and turkey bacon. I also used a whole bottle of Frank's chicken wing sauce for the hot sauce. I put my air-bake cookie sheet under the 9x13 dish because the hot sauce tends to burn easy. It looked just like the picture. Thank you mammak!

Slow Cooker Beef Stew IV

I really like this recipe!!! Based on 4 servings, I added a bay leaf, 1/4 tsp thyme, 1/4 tsp rosemary, 3 oz. tomato paste (half a 6 oz. can) and no butter. In place of the boullion, in a small bowl, I mixed 2/3 cup of water, 1tbsp plus 1tsp wine, 3 oz. tomato sauce and one Swanson's beef flavored Flavor Boost packet. I poured this mixture over the items in the crockpot. I added 1 cup of frozen organic peas at the end of cooking time. Fantastic!!!!!

Easy Turkey Chili

I love this recipe! I changed it up a bit. Here is what I did for 6 servings... I used (Lite Life Smart Ground 12 ounces) Veggie Meat Substitute instead of turkey. I added 6 peeled and diced carrots. I used kidney beans instead of black beans. I used 1 tbsp chili powder instead of 2 1/2 tbsp. Instead of crushed tomatoes, puree in food processor-1 can 14 oz. Glen Muir Organic diced tomatoes and 2 dried/soaked/seeded pasilla peppers.
