Thai Basil Rolls with Hoisin-Peanut Sauce

This sounds exactly like the Vietnamese salad rolls that I love at a local Pho restaurant - I can't wait to try this recipe!

GF, Soy Free, Vegan Vanilla Cake (can be flavored lemon/orange/hazelnut etc)

I had to reduce the amount of vinegar, as it tasted like vinegar.. This still was not amazing, it lacks flavor.

Roasted Pork Loin

Just ok. Not enough flavor, and meat wasn't dry, but not moist either. I followed the recipe exactly, but doubled + as my roast was 5lbs. I used a meat probe and this took 2.5 hours.

Black Forest Cake I

This was awesome! I used boxed fudge cake mix and fudge frosting (to wall in the filling, and frost the entire cake). The canned cherries for the filling while tasted good, were absolutely not pretty enough for the top, so I cooked another small batch with frozen cherries with a drop of red coloring which looked beautiful. The whipped cream was amazing, and kirsch syrup in the layers a must. I sprinkled the whipped cream stars on top with chocolate sprinkles, this presented beautifully and got rave reviews =)

Mediterranean Chicken Orzo

I also sautee'd chicken tenders I had on hand. I made this for two, exactly as suggested but with TWO servings of orzo, not a 1/2 lb, and followed the rest. We both really enjoyed this, it was really easy & super quick & perfect for a warm summer evening.

Baked Apples

I make these by cutting the apples in half, creating a well where the core was, and using splenda plus cinnamon and butter, definitely need to be baked at 350 for 30 minutes though. This is a really good low cal dessert!

Spinach Quiche

This was very good, even though I lighted it A LOT. I always make quiches crustless, and I used 1 TB of butter, 2 oz of feta, a light sprinkle of cheddar, 5 fresh mushrooms sliced, and the remaining half of a package of frozen spinache. I sauteed the mushrooms with the garlic and onions. BF loved it. on the keeper list!

Caramels

These are excellent. I have made these over and over again for the past several years. This is the first caramel recipe I tried and I'm sticking with it! I live at 900ft and heating to 249 degrees works perfectly for me. It only takes about 25-30 minutes on my gas range to reach temperature VS. a full hour at best on the electric stove I used to have. I turn the heat to med/high then high shortly after on my super burner and stir CONSTANTLY. I've always used a non-stick LARGE pot and they turn out perfectly every time. There is a comment here about how to determine boiling point and adjust the temp accordingly based on your elevation. Thanks for a fantastic recipe!

Braised Balsamic Chicken
