Ken's Kickin' Posole

My 3rd or 4th batch is simmering on the stove as I type this. I try to follow the recipe as exactly as I can and it is delicious every time. It is so good, I have given a batch of it as a gift. The only ingredient substitutions I have made are: ** Pork sirloin roast works just as well as tenderloin, just trim the fat when you slice into cubes. Sirloin roasts usually seem to be cheaper. ** Grocery didn't have Poblano peppers, so I substitute with Pasilla peppers. ** Was out of fresh or chopped-in-a-jar garlic, so I used powdered. *I like the cilantro better as a topping instead of cooking it. *Half/half with yellow and white hominy, just because. It does make a huge pot of soup, but being that it is pretty labor-intensive, that makes it worth your while. It freezes and reheats perfectly, so that's what I do. Once it's cold in the fridge, it thickens up and I spoon it into foodsaver bags and freeze it in those. I think it is actually even more tasty reheated. Awesome recipe, Ken.

Italian Meatball Sandwich Casserole

The meatballs were fantastic. I added egg because I was having trouble getting them to stick together. The meatballs and sauce were delicious, but my husband and I didn't like the cheese mixture & the bread. I didn't expect it to be so rich. I know the casserole is the whole idea of this recipe, but I liked the meatballs so much, I think next time I'll ditch the bread/cheese/mayo mixture and just serve the meatballs & sauce like regular spaghetti with garlic bread.

Angel Chicken Pasta

I ended up forgetting about the pasta and just ate the chicken with the sauce poured on top. We really enjoyed it and I am already looking forward to the leftovers for lunch tomorrow. I can see why it is so popular because it was easy and the sauce was delicious. It kinda reminded me of the sauce my mom makes for beef stroganoff. Very good!

Basil Chicken over Angel Hair

This was a great light dinner. I didn't know how it was going to turn out, so I put my husband on standby while I sampled it, and it was better than I thought it was going to be. I was afraid by the smell while it was simmering that the basil was going to be overwhelming, but it was just right. I think if it had had more sauce it would have been too much like spaghetti for me to want to make it again. I liked it the way it was.

Easy Chicken Parmesan

This recipe is great!! I followed the instructions exactly, and it was perfect. Only one thing I almost messed up, so I would suggest that you be sure to keep an eye on the chicken while it is frying in the pan because I fried for 5-6 minutes without really checking it and almost burned one before I realized it. I will definitely make this one again! It was delicious!!
