Italian Vegetable Soup

Reviewed: Aug. 22, 2013
This has been a family favorite for years. We use V8 juice & veggie or beef bouillion powder/broth instead of tomato sauce and add spinach either frozen or fresh with some black pepper. Sometimes we even make it purely vegetarian for a lighter meal. It also works well in the crockpot on low for families on the go. Like Gramma Gorgeous we don't put the pasta in the soup during cooking, but add it during serving or reheating.

Corrigan's Minestrone

Reviewed: Sep. 18, 2008
Easy make ahead family dinner or cold weather party starter. Cook pasta separately. Place pasta in individual serving bowl & add the soup on top. Cooked and drained pasta will keep in a plastic bag in the frig for several days. Personal preferences include less onion & garlic (especially when freezing), chopped spinach, finely shredded cabbage, diced tomatoes, V8 juice and any veggie I have in the frig. Keeping the pasta separate also makes the recipe crockpot & freezer friendly for those rushed days. Enjoy

Linguine Pescadoro

Reviewed: Nov. 15, 2004
Great recipe! I was looking for a recipe that was like the seafood platter my husband loves at our favorite Italian restaurant. I've made it for many different family members and all loved it. I've used scallops, shrimp, crab, leftover lobster & mussels at different times. Always a hit. Thanks!

Quick Chicken Divan

Reviewed: Apr. 1, 2003
My hubby likes this. We poach the chicken in chicken broth & then slice thinly. I also make it a complete dinner by putting cooked rice (great use for leftovers) in the bottom of the pan, top with brocilli (have also used french cut green beans or asparagus), then turkey or chicken, then saucey topping making sure to spread to the edges. I usually top with bread crumbs & a little less cheese.
