Tasty Lentil Tacos

This was so good. I made fajitas instead of tacos because that is what I prefer, but other than that I followed the recipe and can attest that it is awesome!!

Lemon Horseradish New Potatoes

Loved this tangy side dish. The potatoes were cooked to perfection. I used potatoes that were called little gems. It is a mixture of white, red and purple (blue) potatoes. I had never seen these before(Canadian product) They were amazing!

Whole Grain Waffles

Excellent waffles. I replaced wheat germ with equivalent amount of oatmeal. I followed the rest of the recipe exactly. Will definitely make again.

Hawaiian Banana Nut Bread

We loved this banana bread. The only thing I will change next time is try it with only 1 1/2 cups of sugar as I found it a tad sweet.

Marinated Tuna Steak

Absolutely loved it! We cooked it a bit too long (6 minutes on one side and only 2 minutes on the other because we were sure it would be too long otherwise for the size we had). We will definitely make again.

Honey Ribs

Easy and delicious. We all enjoyed this meal immensely. I used 4+ pounds of baby back ribs and replaced the honey mustard with grainy mustard that I had in the fridge. I omitted the water and added more barbecue sauce. I had planned to broil them after 5 hours on high, but they didn't need it. I may play with the ingredients slightly depending what I have on hand. I may add a bit of hot sauce to give it a little kick next time. Enjoy!

Pasta Primavera Sauce

The only thing I changed in this recipe was add mushrooms. It was absolutely perfect. The leftovers were just as tasty. I will definitely make this again. Sprinkle with parmesan and chili flakes for some extra zing! Wow!

Shrimp Etouffee II

I loved this, however I did make a few changes to the original recipe. I made this stovetop like others suggested and only added the shrimp (mine was cooked earlier) the last few minutes to warm through. I only had cream of celery soup so that it was I used. I also added about a cup of white wine and a sprinkling of cajun spices for extra kick. I served on rice with a side of asparagus. A light tasty meal.

Easy Tilapia

We loved this recipe. Slight change...I only had about 1/2 tablespoon of capers so I substituted sliced cured black olives. It really made this more of a Mediterranean flare. The rest remained exactly the same. The cooking time was perfect. I used 4 fillets. Can't wait to eat the leftovers!

Banana Cake VII

I would rate this 4 1/2 stars but I am sure once I cut the sugar to 3/4 cup or maybe even 1/2 cup it will be a 5 star recipe. I made it in the two 9 inch pans and as many mentioned, it does not rise very much. I cut each 9 inch cake in two (horizontally) and whipped up 2 cups of whipping cream with a splash of vanilla to top each layer and spread over the top of cake. It was absolutely delicious. I served it with fresh strawberries, raspberries and blueberries and it was a big hit.

Blackberry Cobbler II

I made this with fresh strawberries, blueberries and blackberries. I put less sugar in dough and fruit because I like a little tang instead of extra sweetness. It was delicious!
