Easy Garlic Broiled Chicken

Easy is the key word of this recipe. In 25 minutes I had wonderful tender chicken breasts that melted in our mouths. I broiled (placing breasts on a foiled-covered roasting pan in the bottom of the oven. I turned after 15 minutes and only broiled 10 more minutes (I actually turned off the oven after 5 minutes and kept it in there for another 5 with the oven off)...Delicious

Spinach Cheese Tortellini

I changed a few things in this recipe to suit my taste, however nothing drastic. I sautéed mushrooms and asparagus in olive oil to cut calories. I added fresh garlic instead of garlic salt and put together my own italian seasoning (oregano, thyme, marjoram, basil and rosemary). I am not a fan of tortellini, but I did use fresh five-cheese tortellini this time, but in the future, I will use any short pasta that I have (penne, shells etc.). My family loved this!

Whole Grain Waffles

Excellent waffles. I replaced wheat germ with equivalent amount of oatmeal. I followed the rest of the recipe exactly. Will definitely make again.

Easy Portobello Mushroom Saute

Loved this side dish. I will cut the onions in ringlets next time as I would prefer that they cook a bit more. I used a red onion. It was delicious, fast and yummy.

Shrimp Etouffee II

I loved this, however I did make a few changes to the original recipe. I made this stovetop like others suggested and only added the shrimp (mine was cooked earlier) the last few minutes to warm through. I only had cream of celery soup so that it was I used. I also added about a cup of white wine and a sprinkling of cajun spices for extra kick. I served on rice with a side of asparagus. A light tasty meal.

Butternut Squash Fries

We enjoyed this side dish, however I will follow other people's advice to heat the cookie sheet before putting the squash fries into the oven. They were a bit "wet" but very tasty. I also added a bit of olive oil to the mixture. I will make this again.

Salmon with Dill

This was excellent. Unfortunately my husband would have preferred that the salmon be a bit caramelized on top. I think that I might stick with doing it in the frying pan for this reason.

Lemon Rosemary Salmon

I would give this a one star because my husband complained so much about it, however that was my fault. I added garlic which is a no-no in his book. Plus, instead of rosemary I put fresh dill...therefore I am giving this recipe 4 stars because the texture of the fish was so perfect and I am sure if I omit the garlic it would be a winner in his book too, as he loves the flavour of the fish if it isn't overpowered by garlic. I don't like giving less stars if I change the recipe too much.

Chicken with Mushrooms, Prosciutto, and Cream Sauce

We loved this! Don't add salt because the prosciutto is plenty salty. I may even omit the butter at the bottom of the pan and just spray a bit of Pam or use olive oil for a healthier way. I used 3 medium portobellos and about 12 button mushrooms...don't cut too small because they shrink. I used 12 boneless chicken thighs and baked in a 9 x 13 glass pan. Will make again for sure! Would be great for guests too!

Addictive Pumpkin Muffins

A bit too chewy, and as others mentioned, the papers stuck to the muffins and the bottoms burned. They are good, but I have eaten better..not a keeper for me.

Beef Barley Soup

One cup of pearl barley is way too much. 1/2 cups would be better. Otherwise the soup is very tasty and we all enjoyed it.
