Jamie's Cranberry Spinach Salad

Loved the dressing. I did not have poppyseeds, but I used white and black toasted sesame seeds and whole almonds...might chop them a bit next time. Will not use butter next time either. Would rather toast in dry heat and not have the extra calories.

Grilled Salmon II

Loved this. Did not add onions, but will another time. 5 minutes per side and voila...amazing dinner. Only marinated for 30 minutes at room temp.

Roast Pork with Maple and Mustard Glaze

This was surprisingly (to me) perfect. One hour and delicious pork roast. I added a sliced vidalia (sweet) onion around the roast and some small new potatoes cut in half. I also added sliced mushrooms (10) the last half hour or so. We enjoyed it very much. Might cut down a bit on the maple syrup next time as it was a tad sweet, but it worked!

Jumbo Fluffy Walnut Apple Muffins

I used one cup of brown sugar and 1/4 cup of white. They were delicious! I would make without the topping as we arent "sweet" eaters, but other than that they were very good.

Easy Garlic Broiled Chicken

Easy is the key word of this recipe. In 25 minutes I had wonderful tender chicken breasts that melted in our mouths. I broiled (placing breasts on a foiled-covered roasting pan in the bottom of the oven. I turned after 15 minutes and only broiled 10 more minutes (I actually turned off the oven after 5 minutes and kept it in there for another 5 with the oven off)...Delicious

Spinach Cheese Tortellini

I changed a few things in this recipe to suit my taste, however nothing drastic. I sautéed mushrooms and asparagus in olive oil to cut calories. I added fresh garlic instead of garlic salt and put together my own italian seasoning (oregano, thyme, marjoram, basil and rosemary). I am not a fan of tortellini, but I did use fresh five-cheese tortellini this time, but in the future, I will use any short pasta that I have (penne, shells etc.). My family loved this!

Shrimp Etouffee II

I loved this, however I did make a few changes to the original recipe. I made this stovetop like others suggested and only added the shrimp (mine was cooked earlier) the last few minutes to warm through. I only had cream of celery soup so that it was I used. I also added about a cup of white wine and a sprinkling of cajun spices for extra kick. I served on rice with a side of asparagus. A light tasty meal.

Butternut Squash Fries

We enjoyed this side dish, however I will follow other people's advice to heat the cookie sheet before putting the squash fries into the oven. They were a bit "wet" but very tasty. I also added a bit of olive oil to the mixture. I will make this again.

Salmon with Dill

This was excellent. Unfortunately my husband would have preferred that the salmon be a bit caramelized on top. I think that I might stick with doing it in the frying pan for this reason.
