About this Cook
I am a finicky cook and it is easiest for me to "wing it". I am learning that some of my best recipes come out best not exactly as written and that it is possible to estimate measurements instead of making it an exact art.
My favorite things to cook
Casseroles, one pot meals, and pretty desserts. I am also learning to enjoy making lasagna.

Goulash, beef stew, chili, and Grandma's strawberry cake are all food I associate with my family growing up.
My cooking triumphs
Blueberry sour cream coffee cake, mexican chicken casserole and Downeast Maine Pumpkin Bread...wows crowds every time I make them.
My cooking tragedies
Once I spent about an hour preparing a complicated cake recipe and almost 2 hours cooking it...when I went to remove it from the oven, the old bundt pan I was using bent and slipped out of my oven mitt onto the floor. I cried. I made my husband and toddler eat the crumbly bits left in the pan anyway. Nobody complained.

Sweet, Sticky and Spicy Chicken
Fantastic recipe! After reading the reviews, I made the following mods: used chicken tenderloins chopped up instead of breast, doubled the sauce ingredients, dusted the chicken in flour prior to sauteing and added a couple of cups of chopped fresh broccoli. Also, as others said, the sauce was still runny after cooking with the chicken for 8 min so I added 2TBS cornstarch mixed in with 1/4 C water into the sauce and it thickened up immediately. Will be making this again!

Cranberry Orange Breakfast Bread
I followed the recipe exactly as written and put ingredients in the bread machine as manual directed but the bread did not rise as it should have and turned out really tough. Not as much flavor as I'd hoped. I am assuming that the recipe should include in the directions to heat the orange juice (fresh squeezed or from a carton??) up a bit or to proof the yeast beforehand. I added about 2 TBS of sugar hoping to avoid this problem but it still did not rise like it should have. Please note if you are looking for a very sweet bread this is NOT very sweet at all.

Super Easy Rosemary Bread Machine Bread
Followed the recipe exactly and it did not rise much so I was worried it would be dense and flat. To my delight, it came out soft and fluffy in the middle with a nice, lightly crunchy crust. All three picky kids loved it. Note to those using a large bread machine (mine is a Zojirushi): this recipe will cook a very small loaf as written. To get the larger loaf, the recipe will need to be doubled. I will try that next time.
