Asian Kale with Noodles

OMG! I can't believe I made this! It was probably one of the most delicious recipes I have ever made with some ingredients I have never used! I am not a good cook, so I am amazed at myself! I did make a few little changes - I used coconut oil for the vegetable oil (never cooked with coconut oil before). I have never eaten kale before, so that was different for me. I ran out of soy sauce so added a Pampered Chef product that had soy and sesame in it. I only put in two eggs and no sesame oil. I will make this again and again!

Chicken Breasts with Olives

Mom's Zucchini Bread

This is delicious! I only made half the recipe with one egg and a little bit more oil. I used dried cranberries instead of the walnuts. I had to bake it for 1 hour 20 minutes before it was done. I will make it again!

Oven Baked Zucchini Fries

Sauteed Apples

I followed the recipe exactly (which hardly ever happens!) and it was sooooo good, I can't believe I made it! The prep time is a lot longer than 5 minutes though if you count the preparation of the apples, but it was still fast and easy!

Pecan Pie

I made the mistake of buying the store-brand pie crust which turned out to be the world's teeniest pie crust! It was so flat that I almost thought it was a pizza crust! I knew from previous pecan pie experience that the ingredients would be too much for the crust so I had to alter the recipe a bit. I only used 1 cup of white sugar, added 1/4 cup brown sugar, used only two eggs and one cup of pecans. The amount was perfect for the teeny crust and it turned out better than the pecan pie I used to make (couldn't find the recipe)! I will make this again for Christmas! I took a great picture, but I guess it's too small to post (the website must have changed the requirements because I have posted photos before from the same camera).

Thai Curry Soup

This was so good and easy! I can't believe I made it myself! I did make a few changes which makes the recipe even better (that you can do that so easily)! I did not use lemon grass,I used green curry paste, I did not have chicken broth, so I just counted the juice from the canned mushrooms and chicken (12.5 oz) plus 3 cups of water. I used the chicken instead of the shrimp, lemon juice instead of lime, no cilantro and red onions cooked at the beginning with the garlic and oil instead of the green onions. Maybe I'll try it more accurately the next time, but this was really good!
