Slow-Cooker Chicken Tortilla Soup
I fell in love with this recipe after my first bite. It's hard for me to find ingredients where I live so I was forced to make my own enchilada sauce (I used the 10 minute enchilada sauce from this website) as well as chicken broth from scratch. This may have made the recipe superior to canned products but I cannot be certain. I do know that it's wonderful! I made mine a little hotter than called for but the recipe strongly held it's flavor without being overpowered by spice alone. A little sour cream in the soup is a nice touch. Also, if you feel daring, separate out some broth, tomato chunks, corn (everything but the chicken) and blend in a blender or with a hand wand. The thicker texture is an improvement.

Delicious Moist Poppy Seed Cake
Absolutely incredible! I made this cake while homesick for a similar recipe from my favorite cafe. I am thrilled to say it beat all expectations. Everyone who tasted it raved and it vanished in record time. I was concerned at the last stage about the syrup as I expected it to be much thicker. It has the consistency of water (maybe a little thicker) and I thought for sure the cake would be soggy. It wasn't! It was perfect. I suggest poking more holes to the side of the cake than the center as this syrup will moisten up the crust and balance the flavor. You must try this recipe if you like lemony delicious things!

Oatmeal Raisin Cookies I
Excellent recipe! Everyone that tastes these cookies adores them. This recipe is also great with small substitutions, i.e. chopped up dried apricots instead of raisins or some semisweet chocolate chips! A favorite!
