Pierogi Casserole

great recipe. I changed it up a bit though. For the potatoes. I boiled 3 potatoes, 1 cup yam cut up, 1 cup cauliflower, 2 small carrots, 1 sweet potato and 1 cup butternut squash. boil off the mixture and mash like you would just plain potatoes add butter and sour cream salt and pepper. I have been making my potatoes like this for years just so the kids get extra veggies. Set potatoes aside. I browned some garlic and shallots I also browned some turkey bacon and some pork sausages. set all aside Layering first layer noodles sauerkraut onion garlic mixture cheddar cheese sour cream 2nd layer noodles, potatoe mixture cheddar cheese sour cream 3rd layer noodles potatoe cheddar cheese sour cream last layer the top noodles sausage bacon mixture onion garlic mixture cheddar cheese and sour cream i covered the dish with tin foil baked 1 hr on 300 It was delicious my kids really did not like the sauerkraut but they still ate it. thanks for the recipe.

Wonton Soup

I used pork hamburger instead of pork loin. I mixed the pork hamburger with the chopped shrimp,I added 1/2 tsp soy sauce, 1/2 tsp sesame oil, 1/2 can chopped water chesnuts,1 sliver fresh ginger, 1 tsp sugar, 3 green onion, salt and white pepper 1 tsp. mixed this all up made the wontons I boiled them separately and set aside. I added to the chicken broth BBQ pork chopped, green onion, carrot that i cut into florets, baby bok choy and bean sprouts. Boiled this until the veggies were almost done. add salt and pepper to taste. When I serve the soup I serve the broth and then each person can add their own wontons to as many as they would like. I found if i boiled the wontons in the soup broth it made the broth too thick this way if there are any left over wontons they can just be reheated separately again as the broth. I find the wontons also fall apart if cooked in the broth. I hope this helps my 6 and 7 year old love to help make the wontons.

Oatmeal Raisin Cookies I

This recipe is great. I made a few changes I used organic rolled oats I added 1 tsp of pumpkin pie spice, for the raisins I used organic jumbo thompson and increased them to 1 1/2 cups. baked until just brown around the edges. Yum my 7 year old loves them.

Special Beef Rendang Curry

I changed this recipe up a bit. I didn't have any dried shrimp so i left that out. I used only 1 Tbsp of Sambal Oelek paste instead of the red chili paste. My kids don't like it to spicy. I also added 1 T of cumin. I added some extra veggies. 1 jicama chopped, 1 green pepper chopped,1 shredded carrot and 1 cup snow peas chopped and 1 cup chopped kale. I always add extra veggies just to get them in for the kids. These added veggies added a lovely color. I found it a bit thick after the veggie addition so i added 1 cup plain yogurt. At the end i also added 1 cup raisins and 1/2 cup sesame seeds Extra crunch and a bit of sweetness from the raisins. Great recipe.

Tofu Peanut Stir-Fry

Great recipe changed it a bit added 1 tsp chinese 5 spice to the veggies. I also used raw veggies, green & red pepper, broccoli, mushrooms, kale chopped fine,1 zucchini cooked until tender Only veggies i had, then added 1 scallion chopped 1/2 red onion chopped 2 green onions 1 cup of bean sprouts tossed only to mix in. Cooked the tofu as per the recipe but added some more chinese 5 spice 1/2 tsp. Also 1/2 tsp sambal oelek (HOT) for heat. cooked as per recipe then added (homemade peanut sauce) 1/2 cup whole almonds. Stir in cooked veggies serve. So good no need for any side rice or veggies. Even my 6 & 7 year old liked it. Great recipe thanks Ani. Diane
