Caramel Brownies II

Great brownies! Made exactly as recipe said except substituted pecan halves for walnut pieces. My husband is a serious caramel brownie lover and said these were some of the best he'd ever had. The caramel actually stays gooey in the middle instead of getting hard and chewy by the next day like some recipes. One thing, do not bake any longer than recommended, 20 min max 2nd bake time. Next time I may even take mine out after 15 min for a little softer brownies.

Berry Rhubarb Pie

WOW! What a great way to use up all the rhubarb in my garden! I did make a few changes, doubled fruit, adding in apricots and black cherries, and I brushed the top with melted butter instead, then sprinkled with cinnamon and sugar. So amazingly good!

Big-Batch Butterscotch Cookies

House Fried Rice

This dish was really good but not great. I substituted hot chili oil for one tablespoon of the sesame oil, and used all shrimp. Don't use all the soy sauce unless you like things really salty, just flavor to your own tastes! Rice was mushy, even after making the day before. I think I'm going to make it again using a slightly undercooked basmati rice and see how that goes.

This is a recipe I'll be using again and again. I accidentally omitted the soy sauce but it was still great. I let it marinade overnight so the flavor was very strong and the pork so tender! Serve on a pita with tzatziki, feta and lettuce for a great easy meal.

Pumpkin Bread

Great recipe! Batter was very thick and cooked about 15 min faster than time given. I cut down cloves to 1/2 tsp, added 1/4 tsp ginger, 1/2 tsp all spice, increased cinnamon to 2 tsp, and cut sugar down to 2.5 cups. I used 1 cup white sugar and 1.5 cups dark brown sugar. I pushed walnut halves in the top of the unbaked loaves then sprinkled w/a sugar/cinnamon mix. While the loaves were still warm I made the Pumpkin Bar Icing from this site, adding a tsp cinnamon and thinning it down with milk. I then drizzled it all over the top so it could soak into the warm loaves, but letting the walnuts show through. It was so pretty and yummy! I'm giving this out to everyone at Christmas!

Cinnamon Bread I

Great recipe! I halved this and made a slightly smaller loaf, which I added chopped pecans to. I also added 1/4 tsp b. powder. I did not, however, half the topping. I actually added a tablespoon of brown sugar and a handfull of chopped pecans! It was so pretty and perfect with tea and coffee! I'll be using this one again and again.

Satiny Chocolate Glaze

This is the perfect glaze for everything! I've used it on cakes, as a thin alternative to frosting between layers, for more elegant cupcakes, and even drizzled on mocha chocolate chip muffins and bread! It's so pretty and at Thanksgiving I got asked repeatedly for the recipe. Three women told me "I don't usually like frosting but this was just perfect"!!

Mocha Chocolate Chip Banana Muffins

This is a really yummy way to use up those ripe bananas instead of your usual banana bread, ESPECIALLY for us coffee lovers! I used 3.5 tablespoons of the instant coffee granules, added chopped pecans, and made with half white sugar and half dark brown sugar. This is like a STarbucks mocha in muffin form! So good with coffee. Everyone wanted the recipe!! I also used once in mini loaf pans. It made 5 little loaves. Just increase your bake time about 15 min or so.

Cranberry Orange Loaf

This is so yummy! The only thing I changed was pouring a powdered sugar, oj glaze on while the loaves were still hot. Very pretty and great flavor. The cranberries are a bit tart, so if you're not a big fresh cranberry fan I would use craisins or another dried version. I've tried it with both and it always tastes great!

Lemon-Cranberry Mini Loaves

Amazing bread! It has a great sweet tart taste, and is so pretty that I'm giving it out for xmas this year. If you're making mini loaves, the whole recipe makes 6 perfect mini loaves of bread. I just sprayed the pans with Pam, then gave them a nice coating of white sugar before I poured the dough in. Afterwards I made a tart powdered sugar/lemon juice glaze and poured on while still hot so it really soaked in. Everyone that I've given some to has wanted the recipe. I just can't rave about this bread enough!!

Delicious Peanut Butter Cookies

Made a good cookie, not to crumbly but nothing spectacular. I made some plain, then added chocolate chips to a few batches. Didn't spread enough when baking so make sure and smash them down pretty hard w/a fork.

Mike's Homemade Pizza

I use my own dough recipe but this sauce has become my standard recipe, and we eat ALOT of homemade pizza! It's really spicy and so full of flavor! I have had guests comment on how much they love the sauce more times than I can remember. It's also a really easy recipe to adjust depending on your taste ie more garlic, pepper, etc. The only thing I sometimes change is instead of water, using a can of whole roasted tomatoes, chopped, and the juice from that.

Artichoke Spinach Lasagna

This was really good. Def as good as any lasagna I've ever had in restaurant. I substituted a very strong cheesy homemade alfredo sauce for the red sauce and it worked so well. I've also made it with red sauce, and it was good but I just prefer a cream sauce. Use fresh lasagna noodles if you can make them or buy them, and use a food processor to mix the artichokes and spinach really well. Also freezes well.

Spinach Cheese Manicotti

This recipe is really amazing. I got three boys who HATE spinach to literally clean the pan and ask for more!! The only change I made was to use alfredo sauce instead of red sauce. So so so good!!

Deb's Scallops Florentine

I am an experiences cook and I made it exactly as described and it was just not good. Everything in the recipe seems like it would be great when combined, but it just doesn't meld together at all. Maybe if mixed scallops in sauce w/spinach..I'm not sure but this version just lacks flavor and a decent texture.

Pumpkin Gingerbread

This makes the best bread!! I took the advice in the other reviews and upped the spices by 50% and it smelled and tasted so good! The only other changes i made were just using 2 cups sugar, 1 white and 1 dark brown, and instead of 2 cups oil i used 1 cup oil and 1 cup cinammon apple sauce. Perfect!!! And don't forget the cloves even though the recipe forgets to mention them again! I'll be using this recipe dozens of times for the holidays!

Sugar Cookie Frosting

The Best Rolled Sugar Cookies

Great recipe! Made a perfect fluffy yet light cookie, not too sweet. But dough def needed to be frozen for 10 min to get firm enough to roll out without sticking. I topped these with the Sugar Cookie Frosting from this site and they were so good!! Only change I made was instead of using all white sugar, I used half white sugar and half powdered sugar. Really great!
